How To make Linguine Turkey Bolognese
2 tb Extra-virgin olive oil
1 Celery stalk with leaves,
-finely chopped 1 md Carrot, finely chopped
1 md Onion, finely chopped
2 cl Garlic, finely chopped
1 1/2 lb Ground turkey
1 tb Dried oregano
1/2 c Dry red wine
1/2 c Half-and-half
1 cn Plum tomatoes, crushed
-slightly, with juices -(28 oz) 2 tb Tomato paste
1 c Defatted chicken broth
Salt to taste Freshly ground black pepper -to taste 1 lb Cooked linguine
2 tb Chopped flat-leaf parsley,
-for garnish To lighten a traditional Bolognese sauce, I substituted lean ground turkey for the more traditional ground beef. It's necessary to taste and adjust seasonings as you go along, since the flavor of turkey is not as strong as beef. I've added a generous amount of oregano and garlic for spice and sauteed the meat in extra-virgin olive oil for more flavor. Have patience with this sauce - the long, slow simmer is what makes it so delicious. Freshly grated Parmesan is perfect to serve alongside. 1. Place oil in a large, heavy pot over medium-low heat. Add the
celery, carrot, onion and garlic, then cook 8-10 minutes, stirring occasionally. 2. Raise heat to medium and add the ground turkey and oregano. Cook
for about 8 minutes, stirring and breaking up the meat, until it begins to brown. 3. Add the wine and simmer for about 10-12 minutes. Add the
half-and-half and simmer until nearly reduced, about 6-8 minutes. 4. Add the tomatoes, tomato paste and broth. Bring to a gentle simmer
and cook over medium-low heat, partially covered, for 1 hour, stirring a few times. Season to taste with salt and pepper. 5. Serve hot over just-cooked linguine and sprinkle with chopped
parsley. Per serving: 317 calories, 10 grams fat, 89 milligrams cholesterol.

Turkey Bolognese: A Healthy Twist on a Classic Dish
This is a very quick, easy and healthy ground turkey recipe. This Turkey bolognese recipe as an alternative to the traditional bolognese made with beef. We have been making this for years and it's one of my wife's favorite pasta dishes. Serve it over fettuccine, linguini or your favorite pasta.

Ingredients:
2-3 Tbsn Olive Oil
1 Yellow Onion (diced)
1 Medium Carrot (grated)
3-4 Cloves Garlic (minced)
1 lb Ground turkey
1 1/2 Tsp Salt
1/4 Tsp Pepper
1/2 Tsp Smoked Paprika
1/2 Tsp Garlic Powder
1/4 Tsp Dried Oregano
1/4 Tsp Cinnamon
1 Tbsn Tomato Paste
28oz can Crushed Tomatoes
1/4 cup Parsley (chopped)
1 Tbsn Butter (Optional) not shown
1/4 cup Parmesan Cheese (grated)
Pasta of choice: Fettuccine, Linguini, Spaghetti would be best.
Directions:
1. Bring a large pot of water to a boil and heat 2-3 tbsn's of olive oil in a large pan over medium heat.
2. Add the onion and carrot to the pan, season with a little salt and allow to cook for 6-7 minutes or until they soften.
3. Add the garlic and cook an additional 1-2 minutes.
4. Add the ground turkey, 1 tsp salt, the pepper, smoked paprika, garlic powder, dried oregano and cinnamon and cook until the meat has browned through (7-10 minutes); making sure to break up the meat.
5. Add the tomato paste and stir to combine it.
6. Add the crushed tomatoes, 1/2 tsp salt and the parsley and let this simmer for 15 minutes.
7. With the water boiling, add you pasta and cook to the package directions.
8. Before serving, add 1 tbsn butter (optional) and 1/4 cup grated parmesan and mix together.
9. Server over your pasta of choice and top with additional parsley and parmesan.

Turkey Bolognese
This hearty and delicious bolognese sauce recipe is the classic you love, but made with ground turkey and turkey sausage. Dig in!
INGREDIENTS
1 small diced sweet onion
3 small diced stalks of celery
3 peeled and small diced carrots
4 finely minced cloves of garlic
1 tablespoon of olive oil
8 ounces of ground turkey breast
8 ounces of ground turkey thigh
4 ounces of loose turkey Italian sausage
28 ounce can of whole plum tomatoes and juice
28 ounce can of crushed tomatoes
28 ounce can of diced tomatoes and juice
3 tablespoons of dry oregano
3 tablespoons of dry basil
1 bay leaf
8 ounce can of tomato paste
chicken stock as needed
1 pound of penne pasta
Kosher salt and fresh cracked pepper to taste
PREPARATION
In a large pot with olive oil on high heat add in the onions to caramelize. Once brown add in the garlic, celery and carrots and cook for 3 to 4 minutes.
Next add in the turkey meat and brown.
When to turkey meat is cooked add in the tomatoes and herbs and simmer on low heat for 30 minutes.
At this point check the consistency, as chicken stock may need to be added to thin out the sauce. If the sauce is too thin, thicken with the tomato paste.
Once the sauce is to the desired consistency, add in the salt and pepper and cook on low heat.
In a separate large pot of boiling salted water add in the penne noodles and cook until they are al dente (about 10 to 12 minutes).
Once the noodles are done, strain them and toss with sauce and serve.
Makes 1 ½ gallons of sauce
