How To Bake Lemon Meringue Pie | Lemon Meringue Pie Recipe

Easy Old Fashioned Lemon Meringue Pie Recipe Ingredients:
1 cup sugar
3 tablespoons cornstarch
1/4 teaspoon salt
2 cups milk
4 egg separated
1 teaspoon lemon zest
1/2 cup lemon juice
3 tablespoons butter
Meringue Ingredients
1/2 teaspoon cream of tar tar
1/2 teaspoon vanilla
1/4 cup plus 2 tablespoons sugar
THIS IS HOW WE DO IT:
**Prebake a frozen pie shell according to package directions and let cool.
**Combine sugar cornstarch, salt then add the milk and cook until it thickens and starts to boil. Boil 1 minutes and remove from heat.
**Beat egg yolks at high speed with an electric mixer until thick and lemon in color
Slowly stir in 1/4 of the hot sugar mixture into the egg yolks then and the remaining yolks into the hot mixture. Stir constantly for 2-3 minutes.
**Then Stir in the lemon zest, lemon juice and butter. Spoon in the pastry shell and sit aside.
**Beat egg whites and cream of tar tar at high speed 1 minute. Gradually add 1/4 cup plus 2 tablespoons sugar a little at a time beating on high until stiff peaks form and sugar is dissolved. About 2-4 minutes. Beat in vanilla extract.
** Spread meringue all over filling sealing to the edges.
**Bake at 350 degrees Fahrenheit 12-15 minutes or until it starts to lightly brown.

1 Regular Pie Crust
1/2 Cup Lemon Juice
1 - 14 ounce Can Sweetened Condensed Milk
3 Egg Yolks
Meringue Recipe
3 Egg Whites
1/4 Cup Sugar
Preheat oven @350 degrees
**Bake pie with meringue for 12 minutes or until meringue browns
**Bake pie with no meringue for 12 minutes

Pie crust recipe (for 30 cm size ring)
- 180g of butter
- 120g of sugar
- 350g of plain flour
- 1g of baking powder
- 75g of eggs
- pinch of salt
Lemon mix recipe
- 160 ml of lemon juice
- 2 eggs + 4 yolks
- 150g of sugar
- zest of 2 lemons
- 10g of corn starch
- 80g of butter
- 2 leaves of gelatine

The Farmhouse Lemon Meringue Pie was one of the first recipes I wanted to make from the new cookbook I got Recipes From The Ranch. To me, it did not disappoint, but Titus on the other hand, wasn't pleased... ????

Farmhouse Lemon Meringue Pie
Ingredients:
1 unbaked pie crust
3 Tablespoons lemon juice
2 teaspoons grated lemon peel
2 Tablespoons melted butter
3 drops yellow food coloring (optional)
2/3 cup sugar, plus 2 tablespoons for meringue
1 cup cold water
1/4 cup cornstarch
1/8 tsp salt
4 eggs, separated
Directions:
Preheat oven to 375 degrees. Bake pie crust according to package directions.
Combine lemon juice, butter, lemon peel, and food coloring, if desired, in a small bowl. Mix well.
Combine water, 2/3 cup sugar, cornstarch, and salt in a medium pot. Whisk until smooth. Bring to a boil over medium high heat, stirring constantly. Reduce heat to medium, boil 1 minute.
Remove from heat.
Stir 1/4 cup of the hot sugar mixture into the egg yolks to temper them.
Slowly whisk egg mixture back into pot. Cook over medium low heat 3 minutes.
Add lemon juice mixture and mix well.
Remove from heat.
Pour into baked pie crust.
Make Meringue:
Beat egg whites until peaks begin to form. Add 2 Tablespoons sugar and beat until stiff peaks form.
Spread meringue over pie filling, making sure the meringue completely covers the filling and touches every edge of the pie crust.
Bake 5-10 minutes or until meringue is lightly browned.
Cool completely and refrigerate at least 4 hours before slicing.
