Lemon Barley drink is a delicious drink with many health benefits. After you’ve made this drink, you can use the leftover cooked barley to make another delicious treat – Barley Pudding with palm sugar syrup and coconut milk.

Lemon Barley Drink
Ingredients:
400g pearl barley
2-3 pandan leaves
2 litres water
200g rock suga
4 tablespoons lemon juice
Method:
1. Rinse the barley in water.
2. Fill a saucepan with the water.
3. Add the pandan leaf, barley and rock sugar.
4. Bring to a boil.
5. When the mixture begins to boil, reduce the heat and let the barley simmer for 30 minutes.
6. Remove from the heat, strain and discard the cooked barley or set it aside to make barley pudding.
7. Add the lemon juice to the barley water and mix well.
8. Lemon barley may be served warm or cold, according to your preference.
How to Make Barley Pudding with Palm Sugar Syrup and Coconut Milk
Ingredients:
leftover cooked barley
200g palm sugar
100ml water
300g coconut milk
2 pinches salt
2 pandan leaves
Method:
1. In a pan, melt the palm sugar together with the water and pandan leaves to form a syrup.
2. Remove from the heat, strain and set the syrup aside.
3. In a pan, heat the coconut milk.
4. Add the pandan leaves and salt.
5. Simmer for a few minutes and then remove from the heat.
6. To serve the barley pudding, add as much syrup and coconut milk as you like.
