Puff Pastry Salmon (Salmon Wellington)
Here is what you'll need!
Serves 2
Ingredients
2 tablespoons butter
2 cloves garlic, chopped
½ medium onion, chopped
5 ounces spinach
1 teaspoon salt (for spinach)
1 teaspoon pepper (for spinach)
⅓ cup breadcrumbs
4 ounces cream cheese
¼ cup Parmesan, shredded
2 tablespoons dill, chopped
1 sheet puff pastry, softened to room temperature
1 salmon filet
1 teaspoon salt (for salmon)
1 teaspoon pepper (for salmon)
1 egg, beaten
Preparation
1. Preheat oven to 425°F.
2. In a pan over medium heat, melt butter.
3. Add the garlic and onions, cooking until translucent.
4. Add the spinach, salt, and pepper, cooking until spinach is wilted.
5. Add the breadcrumbs, cream cheese, parmesan, and dill, stirring until mixture is evenly combined. Remove from heat and set aside.
6. On a cutting board, smooth out the sheet of puff pastry. Place the salmon in the middle of the pastry and season both sides with salt and pepper.
7. Place several spoonfuls of the spinach mixture on top of the salmon, smoothing it out so that it does not spill over the sides.
8. Fold the edges of the puff pastry over the salmon and spinach, starting with the longer sides and then the shorter ends. Trim any excess pastry from the ends, then fold the ends on top. Flip the puff pastry-wrapped salmon over and transfer for a baking sheet lined with parchment paper.
9. Brush the beaten egg on the top and sides of the pastry.
10. Score the top of the pastry with a knife, cutting shallow diagonal lines to create a crosshatch pattern.
11. Brush the top again with the egg wash.
12. Bake for 20-25 minutes, until pastry is golden brown.
13. Slice, then serve!

30g crème fraiche
50g smoked bacon
70g cream cheese
100g cheddar cheese
200g fresh spinach
2 garlic cloves
Salt pepper
Puff pastry
Fry bacon, remove from pan.
Fry garlic for 30 seconds add spinach, and wilt. Let cool
Mix together cream cheese, crème fraiche, cheddar cheese, salt pepper, spinach and bacon
Cut pastry into squares, line muffin tray.
Fill with mixture bake in 180degC oven for 30 mins

For this recipe you will need :
500g lean mince
1/2 onion
1 teaspoon rosemary
1 teaspoon crushed garlic
1 tablespoon medium curry
1/2 teaspoon turmeric
1 beef stock cube dissolved in 1 cup water / 1 cup beef stock
3 medium butternut
1 tablespoon honey
1/2 teaspoon cinnamon
Grated cheese ( 1 cup minimum)

An Easy & Delicious Side Dish for Lamb

Ingredients
1 onion, sliced into rounds or half moons
3 zucchini, sliced into half moons
4 baking potatoes, sliced into 1/2 inch slices
2 bell peppers, sliced into rings
1/4 cup olive oil, or more
1 teaspoon dried oregano
feta cheese for serving
The Sauce:
28-30 ounces crushed tomatoes
2-3 roasted red peppers
1/2 teaspoon granulated sugar
salt, to taste
freshly cracked black pepper, to taste
1/4 teaspoon crushed red pepper flakes, optional
Instructions
Preheat the oven to 400 °F, 200°C.
Place all of the veggies in a 9 by 13-inch roasting pan. Drizzle them with oil and season lightly with salt, pepper, and oregano.
Combine all of the sauce ingredients in a blender and blend until smooth. Taste and adjust the seasoning if needed.
Pour the sauce over the veggies and toss them to geth coated and so taht teh sauce is evenly distributed.
Cover the pan with foil and bake for 45 minutes.
Uncover the pan and bake for an additional 45 minutes or until the sauce thickens and the veggies are fork tender.
Serve with feta cheese and toasted bread, Kali Orexi!
