Meatloaf:
Two eggs, 2/3 cup of milk, 2 teaspoons of salt, a quarter teaspoon of pepper, three slices of bread, crumbled, 1/2 of an onion chopped, 1/4 cup of shredded raw carrot, 1 cup of shredded cheddar cheese, 1 1/2 pounds of ground beef. Mix all together.
Mix 1/4 cup of ketchup, 1/4 cup of brown sugar, and 1 TB of yellow mustard together and spread on top of the meatloaf bake at 3:0 for about an hour and a half.
Pumpkin Latte: (recipe from Bits of Bri Cookbook)
Serves 2.. 2 cups of milk, 3 tablespoons of pure pumpkin purée, 2 to 3 tablespoons of sugar, a 1/2 a teaspoon of pumpkin pie spice blend, 1 tablespoon of pure vanilla extract, 1/2 a cup of strong brewed coffee, sweetened whipped cream, cinnamon sticks for garnish. Combine milk, pumpkin purée, sugar, pumpkin pie spice and vanilla extract in a sauce pan. Place over medium heat until hot, do not boil. Whisk milk mixture vigorously until it is foamy about 30 seconds. Pour coffee or espresso into two large mugs, divide the milk mixture and pour each half into the mugs, top with whip cream and then sprinkle with pumpkin pie spice and add a cinnamon stick to garnish.

Autumn Potpourri:
Cranberries, one sliced orange, one sliced apple, two cinnamon sticks, a sprig of rosemary, whole cloves, vanilla extract. Add water and place all ingredients into a slow cooker and cook on low throughout the day be sure to watch and add water if needed.

This Pumpkin Ice Cream Pie is a favorite in our home! However, one of my daughters cannot have gluten or dairy so I make her a version that is gluten free and dairy free! Pecan Pie and Egg Custard Pie
Next to the ham and turkey, these pies are a necessity on my holiday table. Add fresh whipped cream and you've put it over the top.
Pecan Pie
1 unbaked 9 inch pie crust
3 eggs, room temperature, beaten
1/2 cup granulated sugar or
1/4 cup brown sugar, 1/4 cup granulated sugar
1 cup corn syrup, light or dark
1 tsp salt
1 tsp vanilla
1 tbsp cornstarch
3 tbsp butter, melted
1 cup pecans, broken
Preheat oven to 350°
Beat eggs, add remaining ingredients except for the pecans. Mix well. Put pecans in the pie crust. Pour mixture over pecans. Bake 45-50 minutes, checking after 45.
Egg Custard
1 unbaked 9 inch pie crust
3 eggs, room temperature, beaten
1/2 tsp salt
1 3/4 milk, scalded
2/3 cup granulated sugar
1 tsp vanilla
1 tbsp butter, melted
grated fresh nutmeg, or ground
Preheat oven to 450°
Beat eggs slightly. Mix in remaining ingredients. Pour into unbaked pie crust. Grate nutmeg over top. Bake 15 minutes at 450°, reduce heat to 350°, bake 25-30 minutes, checking after 25 minutes.
