Quick Pumpkin Muffins!! | Healthy Delicious Pumpkin Muffins! | Whole Wheat Pumpkin Muffins
Healthy delicious and easy pumpkin muffin recipe! No equipment needed! Get into the fall spirit and try making these for yourself! Recipe below:
Ingredients:
1 and 3/4 cups (220g) whole wheat flour (spoon & leveled)*
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon pumpkin pie spice*
2 large eggs, at room temperature
1/2 cup (95g) lightly packed brown sugar
1 cup (228g) pumpkin puree (not pumpkin pie filling)
1/3 cup (72g) unsalted butter, melted and slightly cooled*
1 teaspoon pure vanilla extract
1/3 cup (80ml) milk
1/2 cup (90g) mini chocolate chips*
Directions:
Preheat oven to 350°F (177°C). Grease muffin tin with nonstick cooking spray. Set tin aside.
In a large bowl, whisk the flour, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice together. Set aside. In a medium bowl, whisk the eggs, brown sugar, pumpkin puree, melted butter, vanilla, and milk together until combined. Pour the wet ingredients into the dry ingredients, stir a few times, then add the mini chocolate chips. Fold everything together gently just until combined.
Divide batter into muffin tin and bake 16 to 18 minutes or until a toothpick inserted into the center comes out clean. If your oven has hot spots, be sure to rotate the pans during bake time. Remove tin from the oven. Allow muffins to slightly cool before enjoying.
Pumpkin Honey Muffins
Pumpkin Honey Muffins
Preheat oven to 325 degrees
Grease muffin pan or fill with cupcake papers
Ingredients:
⅓ cup melted coconut oil olive oil
½ cup honey
2 eggs
1 cup pumpkin purée
¼ cup milk (or almond milk)
1 teaspoon baking soda
1 teaspoon vanilla extract
½ teaspoon salt
½ teaspoon cinnamon
½ teaspoon ground ginger
¼ teaspoon nutmeg
¼ teaspoon allspice
1 ¾ cups whole wheat flour
⅓ cup old-fashioned oats, plus more for sprinkling on top
Instructions:
In a large bowl, beat the oil and honey together with a whisk.
Whisk the eggs, and add to bowl.
Mix in the pumpkin purée and milk.
Add the baking soda and spices.
Add the flour and oats and mix with a large spoon, just until combined.
Divide the batter evenly between the muffin cups.
Sprinkle the tops of the muffins with a small amount of oats.
Bake muffins for 22 to 25 minutes, or until a toothpick inserted into a muffin comes out clean.

Honey Pumpkin Muffins
1-1/2 cups - all-purpose flour
1-1/2 teaspoons - baking powder
1 teaspoon - baking soda
1/4 teaspoon - salt
1-1/2 teaspoons - ground cinnamon
1 tsp allspice
1/4 cup (1/2 stick) - butter or margarine, softened
3/4 cup - honey
1 - egg
1 cup - solid-pack pumpkin
chopped toasted walnuts
In medium bowl, combine flour, baking powder, baking soda, salt, cinnamon, & allspice set aside. Using an electric mixer, beat butter until light; beat in honey, egg and pumpkin. Gradually add flour mixture, mixing until just blended; stir in walnuts. Spoon into 12 greased or paper-lined 2-1/2 inch muffin cups. Bake at 350°F for 25 to 30 minutes, or until toothpick inserted in center comes out clean. Remove muffins from pan to wire rack. Serve warm or at room temperature.
