Ingredients:
1 Pie Pumpkin
FOR PUMPKIN STUFFING
2 Gala Apples
1tbsp Lemon Juice
2 Madjool Dates
1/4 cup Pecans
1/2 tsp Cinnamon
1/4 tsp Salt
1 tsp Vanilla Extract
2 tbsp Brown Sugar
2 tbsp Whit Sugar
TO SEASON PUMKIN
1 tbsp White Sugar
1 tbsp Brown Sugar
1/2 tsp Cinnamon
1/4 tsp salt
LET'S COOK
-Make aluminum foil bowl as seen.
-Cut top off pumpkin, remove seeds.
-In a mixing bowl add diced apples add lemon juice and toss.
-Add to the mixing bowl, coarse chopped dates, chopped pecans, cinnamon, salt, vanilla extract, brown sugar, white sugar, mix and set to the side.
-To season the pumpkin, mix brown sugar, white sugar, cinnamon, salt and coat the inside to the pumpkin.
-Get a deep cooking pan, place aluminum foil bowl inside pan.
-Coat outside of the pumpkin with canola oil.
-Place pumpkin in aluminum bowl.
-Fill pumpkin with stuffing
-Place the top of pumpkin on leaving a large open vent.
-Pour water in the pan, be sure water does not get in your aluminum bowl. Just about a forth of an inch of water should do.
-Place in over on 350º bake for one hour.
-Once done, remove and let cool for 15 minutes.
