how to make a maple pecan pumpkin pie
what's better than a traditional pumpkin pie? a maple pecan pumpkin pie!
this is a delicious twist on a traditional pumpkin pie recipe. it has all the goodness of a sweet pumpkin pie along with a candied crunch on top. with Thanksgiving coming up for some folks, give this recipe a try!
Ingredients:
pie crust: 2 cups flour, 1 tsp salt, 150 g chilled butter,
75 g shortening, ice water (about 1/3 cup),
1 egg, 1 tbsp milk
filling: 425 g pumpkin puree,
1 can condensed milk, 2 eggs, 1 egg yolk,
1/2 tsp cinnamon, 1/4 tsp each nutmeg & ginger, salt
topping: 1 cup brown sugar,
1/4 cup flour, 1/2 tsp cinnamon
1 stick butter, 1 cup chopped walnuts
1.5 cups pecan halves, maple syrup
Steps:
1. mix flour & salt. add butter.
cut in with a pastry blender until mixture is mealy.
add ice water, little at a time until the mixture comes together.
wrap in plastic. refrigerate for 1 hour. roll to 1/8 thickness.
cover an 11 tart mold with dough. bake at 375 F for 15 mins.
whisk together egg and milk. brush warm crust with egg wash.
2. whisk together pumpkin puree, condensed milk, eggs, cinnamon, and salt.
pour filling over cooled crust. bake at 425 F for 20 minutes.
3. mix together brown sugar, flour, butter, cinnamon, and salt.
add chopped walnuts. sprinkle the crumble over filling.
continue to bake at 350 F for 30 mins. bake until dark golden-brown.
4. remove from oven. arrange pecan halves. dizzle with maple syrup.
chill & serve.

Serves eight
FOR THE PUMPKIN:
A small pumpkin or medium squash – halved and seeds removed
Light brown sugar
Cinnamon powder
Heat the oven to 400 degrees F (200 C).
Rub the inside of the pumpkin or squash with brown sugar. Sprinkle some cinnamon inside each half and place them flesh side down on a baking sheet (line it with aluminum foil for easier cleaning) and place them in the oven for about 50 minutes – or until the squash is fully cooked and soft.
Remove the squash from the oven and cool down. Remove the pulp and mash it. Measure out two cups of mashed pumpkin into a bowl.
FOR THE PIE:
1 – pie dough for a 9-inch dish
2 whole eggs and 1 egg yolk
½ cup light brown sugar
1/3rd cup pure maple syrup OR 1/3rd cup white sugar
1 tsp. vanilla extract
1½ cups whipping cream OR 1 – 12 oz. can evaporated milk
2 tsp. ground cinnamon + some for garnishing the cream
1 tsp. ground ginger
¼ tsp. nutmeg
a pinch of salt
¼ tsp. ground cloves
Whipped cream for serving
Heat your oven to 400 degrees F (200 C).
Roll out your pie dough and line a 9-inch pie dish. Prick the dough all over with a fork.
Whisk the eggs, yolk, brown sugar and maple syrup in a bowl. Add the vanilla extract and beat in. Add the cream or evaporated milk and whisk for about one minute. Whisk in the spices.
Add the egg and cream mixture to the mashed pumpkin and mix very well. Pour the mixture into your pie shell.
Place the pie in the oven and bake for 15 minutes. Reduce the heat to 350 degrees F (176 C) and bake for an extra 30 to 40 minutes or until an inserted knife comes out clean.
If your pie edge is getting too browned please cover it with some aluminum foil to finish cooking it.
Remove the pie from the oven and let it cool down completely before serving it. Serve with whipped cream. Sprinkle some cinnamon powder on top for garnish if you would like.
FOR THE WHIPPED CREAM:
½ cup cold whipping cream
¼ cup confectioner’s sugar (powdered sugar, icing sugar)
Beat the cream until it starts to stiffen. Add the sugar and beat until you have stiff peaks. Serve with the pie.

Spiced Maple Pumpkin Pie | Fresh P
This deep dish spiced pumpkin pie sweetened with maple syrup is insanely good. It's actually the best pumpkin pie I've EVER eaten.
INGREDIENTS
24 oz roasted pumpkin, winter squash and/ sweet potato (I use 1 medium sweet potato and make up the balance weight in pumpkin/squash)
1 cup maple syrup
1 1/8 cup heavy cream
5 large eggs
4 Tablespoons butter, browned
1 tablespoon vanilla extract
1 1/2 teaspoon ground cinnamon
3/4 teaspoon nutmeg, freshly ground
rounded 1/4 teaspoon ground cloves
rounded 1/4 teaspoon ground ginger
1/2 teaspoon sea salt
DIRECTIONS
Cut your pumpkin/squash in half, scoop out the seeds and roast with a whole sweet potato in a 350 degree oven for 20-45 minutes or until a fork pierces through them easily. Scoop out the flesh and set aside.
Melt butter over medium heat continue to cook until it turns a medium brown. Remove from heat and set aside.
Place all your ingredients, except the butter, in the blender and blend until silky smooth. Drizzle in the butter and continue to blend until incorporated.
Bake on the bottom rack of your oven for one hour or until the crust is golden brown and the top is puffy, cracked around the edges and set. The center should be slightly loose. Allow your pie to cool completely before serving.
Serve with whipped cream.
WHIPPED CREAM
Heavy cream, a dash of maple syrup, a few drops of vanilla and a tiny pinch of salt. Whip until its fluffy but still pourable.
