How To make Glazed Rack Of Lamb For Two
1 ea Lamb rack (1 1/2 lb), French
1 x Salt
1 x Pepper
1 t Dried mustard
1/4 c Soy sauce
1/4 c Honey
1/4 t Dried ginger
1 ea Clove garlic, crushed
1/4 c Dry sherry, lemon or orange
Place lamb on rack in shallow roasting pan. Sprinkle with salt and pepper. In small bowl, combine mustard, soy sauce, honey ginger, garlic and sherry or fruit juice. Decorate tips with kumquats, olives or paper frills. Cook lamb in oven preheated to 325?F for about 30 to 35 minutes per pound, or until meat thermometer registers 140?F for

Grilled Rack of Lamb | Easter Recipe | Safeway
Make your Easter celebration memorable right at home with this Grilled Rack of Lamb recipe!
INGREDIENTS
2 tsp rosemary, minced
2 garlic cloves, minced
zest of 1 lemon
1 tsp kosher salt
1/2 tsp ground black pepper
2 racks of lamb, cut in half
2 Tbs extra virgin olive oil, plus extra for brushing the grill and racks of lamb (cut in half)
DIRECTIONS
1. In a small bowl, combine rosemary, garlic, lemon zest, salt and pepper. Rub both sides of the rack with olive oil, then rub in spices.
2. Preheat an indoor cast iron grill over medium heat. Brush the grill with olive oil. Grill the lamb for 6 minutes, then flip onto other side. Cook for an additional 6 minutes, then flip and cook 4-6 more minutes, or until the temperature reaches 145° for medium.
3. Remove lamb from the grill and rest for five minutes tented loosely with foil. To serve, cut racks into individual chops.
PRO TIPS
1. For great presentation, brown the ends of each rack before removing from heat.
2. A teaspoon of mint or oregano could easily be added to this recipe to add more flavor.
