How To make Fried Rice Casserole
1 Tablespoon margarine
1 cup uncooked long grain rice
1 medium onion
chopped
1 can (10 3/4 oz.) Chicken Gumbo soup
1 1/2 cups boiling water
2 bouillon cubes :
chicken or beef
1/2 cup fat free egg substitute
Preheat oven to 350 degrees. In medium skillet over medium heat, melt margarine. Add rice and stir to coat; cook and stir until rice is golden brown, about 6 minutes. Put browned rice into 3-quart casserole with lid. In same skillet, add chopped onions and saute until transparent; add to rice. Pour soup over rice mixture.
Pour boiling water into bowl, add bouillon cubes and stir to dissolve. Pour over rice mixture. In small skillet, scramble egg substitute until dry and cut into small pieces; sprinkle on top of rice mixture. Cover casserole and bake for 1 hour. Serves four to five.

Seafood 'baked' rice is some classic Hong Kong chachaanteng Canto-Western food, a dish that’s perhaps one of my top-5 Chinese comfort foods.
‘Baked’ is in quotes because it’s really more of a quick broil. At its core, this dish’s some egg fried rice smothered with seafood and bechamel, topped with cheese… then briefly tossed in the oven for a quick melt.

My Chicken Fried Rice Recipe = BETTER THAN TAKEAWAY
My Chicken Fried Rice is a recipe I have been making for years, Its a quick recipe for takeaway-style Chinese chicken fried rice with loads of flavour. I've included lots of swaps so you can use up whatever you've got in your pantry.

Ingredients:
2 tbsp vegetable oil
1 onion peeled and diced
1 red bell pepper deseeded and finely chopped
2 cloves garlic peeled and minced
2/3 cup (115g) frozen peas
2 cups (250g) cooked shredded/sliced chicken
1/2 tbsp sesame oil
4 cups (800g) boiled and cooled long grain rice (this is about 1 1/3 cups (300g) dried rice that has been boiled in water)
2 eggs
2 tbsp dark soy sauce
1/4 tsp salt
juice of 1/2 a lemon
To Serve:
1/2 bunch of spring onions/scallions chopped
