Ingredients:
Serves 4 pax
120g of chicken (marinate with 0.5 tsp of cornflour & 1 tsp of light soy sauce & some white pepper)
100g of prawns (marinate with 0.5 tsp of cornflour & 1 tsp of light soy sauce & some white pepper)
Overnight rice - cooked from 2 cups of raw jasmine rice (1 cup of rice = 159g)
2 beaten eggs
2 tablespoons of light soy sauce
0.5 teaspoon of turmeric powder or curry powder
1 teaspoon of chicken stock powder (or 1 tablespoon of oyster sauce)
3 pieces of shallots - thinly sliced
3 cloves of chopped garlic
100g of pineapple
24g of raisins
30g of unsalted roasted cashew nuts
1 teaspoon of salt (or to taste)
A few dashes of white pepper
Other ingredients

Pineapple boat (optional)

Delicious Fried rice at home
Ingredients per person
- 2 cups cooked cold rice
- 1 egg
- 1 spring onion, sliced thin
- 100g ham
- 50g frozen peas
- 2 tbsp soy sauce
- 3 dashes maggi seasoning
- 2 tbsp grapeseed oil
Method
1. Heat the oil in a wok or large frypan.
2. Add your beaten egg and scramble. Once cooked, remove from the wok and set aside.
3. Once the wok is hot again, add the ham and cook for 2 minutes and then add the spring onions.
4. Once the temperature is back in the wok, add the cooked rice and stir well.
5. Next add the peas, the cooked egg, and then the soy sauce on the outside of the wok.
6. Season with the maggi and white pepper.
7. Finish with the spring onion greens and enjoy!

3 cups (600 g) cooked long grain rice
1 lb chicken breast
1 small to medium (53 g) carrot
1 to 2 tsp (9 mL) dark soy sauce
1 to to 2 tsp (9 mL) sesame oil
1/2 cup (23 g) scallion greens
2 Tbsp (9 g) scallion whites
FOR THE MARINADE
1 Tbsp (15 mL) soy sauce
