1/2 Fillet of beef, trimmed - (about 2-1/2 to 3 lbs.) 2 tb Olive oil 1 tb Cracked black pepper
CILANtrO SAUCE:
1 c Cilantro leaves 1/2 c Parsley leaves 2 Limes; juice & zest only 1 Garlic clove; crushed 1 tb Dijon mustard 1 1/4 c Cornichons 1 ts Ground coriander Preheat oven to 450 F. Rub fillet with olive oil and pepper. Roast 20 to 25 minutes for rare. Cool; refrigerate. Serve cold with cilantro sauce. CILANtrO SAUCE: Combine all ingredients in a blender and process until leaves are roughly chopped and ingredients are blended. Refrigerate until ready to serve. -----

I also share with you THE ultimate steak dipping sauce that no Thai person can ever go without: nam jim jaew. If you don't eat beef, both the marinade and the sauce can also work for any other grilled meats like chicken, pork, or lamb.

In a large bowl: 1/4 cup soy sauce 2-3 oranges juiced 2-3 limes juiced 2-3 Tbs olive oil 5-6 cloves minced garlic Handful of cilantro 1-2 tsp cumin 1 heft Tbs chili powder Pinch of salt
Mix well and add your 1.5-2 flank steak or preferred steak of choice.
I would recommend marinating 4-6 hours or overnight!
Cook your preferred way pan, grill or air-fryer
I love these with corn tortillas and some onion and cilantro with an extra squeeze of lime!
