How To make Filled Sugar Cookies
1 1/2 c Powdered sugar
1 c Margarine or butter;
-softened 1 ts Vanilla
1/2 ts Almond extract
1 Egg
2 1/2 c All-purpose flour*
1 ts Baking soda
1 ts Cream of tartar
2 c Raisins; cut-up dates or
Figs 3/4 c Sugar
1/2 c Chopped nuts; if desired
3/4 c Water
Granulated sugar *if using self-rising flour --- omit Baking soda and cream of -tartar. Recipe by: Betty Crocker's Cookbook Mix powdered sugar, margarine, vanilla, almond extract and egg. Stir in remaining ingredients except granulated sugar. Cover and refrigerate at least 2 hours. Cook raisins, sugar, nuts and water, stirring constantly, until mixture thickens; cool. Roll dough 1/8 inch thick. Cut into 24 circles with 2-1/2-inch doughnut cutter that has center removed. Replace center and cut
out 24 circles with doughnut cutter. Place whole circles on lightly greased cookie sheet. Top with raisin mixture, spreading almost to edges. Top with remaining circles. Press edges together with floured fork. Sprinkle tops with granulated sugar. Bake 8 to 10 minutes or until light brown; cool. 2 DOZEN COOKIES; 245 CALORIES PER COOKIE. -----

✰ 2 cups sifted all purpose flour (240g)
✰ 2 1/5 tbsp corn starch (20g)
✰ 1/4 tsp salt
✰ 1/2 cup unsalted room temp butter (113g)

Cookie Recipe ( Crispy melt away cookie BASE dough) :
- 750 gr soft room temp Butter ( 6 2/3 sticks )
- 300 gr Powdered Sugar ( 2 1/2 cups)
- 3 room temp X Large Egg Whites
- 900 gr All purpose Flour ( 6 cups + 1/2 cup)
- 3 tsp Vanilla
- 1/4 tsp Salt

Divide the dough into 5 equal portions and with each dough make 5 different cookies:
■ Vanilla Butter Cookies:
Leave the first dough as is.
You'll need a piping bag and a tip of your choice.
■ Linzer Cookies:
to the second cookie dough, add:
- 60 gr Almond Flour (1/2 cup)
- 40 gr All Purpose Flour ( 4 tbsp)
- 1/2 tsp Almond Extract
- Jam of your choice
■ Gingerbread *Style* Cookies:
to the third cookie dough, add:
- 2 3/4 tsp Ginger
- 3 tsp Cinnamon
- 2 or 3 tsp Cocoa Powder
- 40 gr Flour ( 4 tbsp)
For stronger gingerbread flavor add more ginger.
■ Sugar Cookies:
to the fourth cookie dough, add:
- 50 gr All Purpose Flour ( 5 tbsp)
- 1/2 tsp Vanilla
■ Chocolate Sugar Cookies:
to the fifth cookie dough, add:
- 60 gr Sweetened Cocoa Powder ( 7 1/2 tbsp) ( Bloom the cocoa with 5 tbsp hot Milk) If you're using UNsweetened cocoa powder you may have to add 1 tbsp more icing sugar.
- 20 gr All Purpose Flour ( 2 tbsp)
- Melted good quality chocolate to fill the cookies

INGREDIENTS
1 pack of Pillsbury Ready To Bake Sugar Cookie Dough
1 pack of Pillsbury Ready To Bake Chocolate Chip Cookie Dough
1 Can of Lucky Leaf Apple Pie Filling
1 Can of Lucky Leaf Strawberry Pie Filling
Chocolate pudding in a cup
Mini Cupcake Papers
Muffin Tin
Reddi Whip
Chocolate Sprinkles
INSTRUCTIONS
Cut the sugar cookie dough and chocolate chip cookie dough into 1/2 inch slices.
Roll each slice into a ball. Put the balls into the mini cupcake papers.
Put the pan of cookie dough balls in a preheated 350°F oven for 12-16 minutes.
Remove when browned.
Allow to cool.
Push an indentation with a measuring spoon to create the place for the filling.
Cool Completely!
Fill each cup with your choice of filling.
Add sprinkles and whipped cream where necessary or toppings of your choice.

Ingredients:
1 cup (230g) Butter, softened
2/3 cup (85g) powdered sugar
1 teaspoon Vanilla extract
1/4 teaspoon Salt
1 Egg yolk
2¼ cups (280g) Flour
Jam of your choice
Directions:
1. Line two baking sheets with parchment paper and set aside. Preheat oven to 170°C (340°F).
2. In a large bowl cream butter and powder sugar until smooth and creamy. Add egg yolk, vanilla extract and mix until combined. Add flour, salt and stir until incorporated and dough is formed.
3. Using a one-tablespoon cookie scoop or measuring tablespoon take 1 tablespoon of dough and roll into balls.
4. Then place the balls on prepared baking sheets. Slightly flatten the balls and then make an indentation with your thumb or with a back of a spoon into each ball. At this stage, if dough is too soft, refrigerate for 30 minutes. Then, fill each with cookie the jam.
5. Bake for 12-15 minutes, the cookies should still be pale, but slightly golden at the bottom.
6. Dust with powdered sugar (optional) and allow to cool on a wire rack.
