How To make Fabulous Fig Bread
1 c Dried Figs, ground
1 c -Boiling water
3/4 c Pistachios
1 1/2 c All-purpose flour
1 ts Baking soda
1/4 ts Salt
4 tb Margarine or butter
1 c Sugar
3 tb Egg substitute; -OR-
1 -Egg
1 ts Vanilla
In a medium-sized heat-proof bowl, combine the figs and pistachios, add boiling water and let cool to room temperature, about 1 hour. Position a rack in the center of the oven and preheat to 350 F. Grease an 8-1/2" by 4-1/2" loaf pan. In medium sized bowl, combine the flour, baking soda and
salt. In a large bowl, beat the butter until fluffy. Gradually beat in the sugar. Add the egg and vanilla and beat for 1 to 2 minutes, or until lightened. Add the dry ingredients and beat until just blended. With a spoon, blend in the fig mixture. Turn into the prepared pan and bake 1 to 1 1/4 hours, or until the bread just begins to pull away from the sides of
the pan, and the top springs back when lightly touched. Cool in pan on a rack for 15 minutes, and then turn out and cool completely. Wrap in plastic and store overnight before serving. Cut into thin slices. Oven Roasted Figs
This is the easiest summer dessert recipe made with fresh figs. Figs are sliced and seasoned with brown sugar, cinnamon and rosemary and then baked. This #figrecipe is a hit when served with vanilla ice cream or whipped cream and with a drizzle of honey. One of the best #glutenfreedesserts ever!

RECIPE:
Ingredients:
5 fresh figs
1 tablespoon brown sugar
½ teaspoon cinnamon
A handful of rosemary sprigs
1 and ½ tablespoon honey
Method:
Preheat oven to 350F (180C).
Slice the figs as you desire and place in a baking dish.
Sprinkle brown sugar and cinnamon on fig slices.
Toss rosemary sprigs over them.
Roast for 30-40 minutes and remove from the oven.
Cool for 10-15 minutes and serve with honey and vanilla ice cream or whipped cream.

How to Make Yogurt Walnut Fig Bread
Ingredients:
1 ¼ cup Green Valley Creamery low fat plain yogurt
2 eggs
2 teaspoons vanilla extract
2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon sea salt
½ cup coconut sugar
1 cup cooked quinoa
½ cup chopped dried figs
½ cup chopped walnuts
Directions:
1. Preheat the oven to 350 degrees
2. Combine the flour, baking soda, baking powder sea salt and the sugar into a small bowl. Set aside.
3. Add the Green Valley Creamery low fat plain yogurt, eggs, vanilla extract into a large bowl. Whisk to combine.
4. Gently whisk the dry ingredients into the wet ingredients.
5. Add the quinoa, the dried figs and walnuts into the mix.
6. Spray a 9-inch loaf pan with nonstick spray. Add the batter and place in the oven on the middle rack. Bake for 65 minutes or until golden brown and a toothpick placed into the center comes out clean.
