Recipe
1 finely sliced onion
1 x 400g tin of black beans, drained and rinsed
1 tbsp oil
1 tsp paprika
1 tsp mixed dried herbs (optional)
1 x 400g tin of coconut milk
2 tbsp peanut butter (smooth or crunchy)
2 tbsp tomato puree (can also use ketchup)
salt and pepper
100g green beans or peas
a dash of lemon juice
1. Lightly cook the onion until it begins to soften then add the beans and oil. Then cook on medium for a few minutes to full cook through the onion. Then add paprika and mixed herbs, making sure to stir them in.
2. Pour in 125ml water and the coconut milk as well as the peanut butter and tomato puree, then mix. Turn up the heat allowing it to briefly boil, then reduce the heat back to medium and let it simmer for 20 minutes, stirring now and again. The sauce should thicken and be reddish-brown in colour.
3. Then add the green beans and cook for 5 more minutes. Season with salt and pepper as well as a dash of lemon juice.
4. Then serve! I had mine with a side of broccoli and white rice :)

Best Lentil Soup Ever | No Expert with Emily Duncan
I have been on an insane quest for the perfect lentil soup recipe. This is the result of that quest.
It's kind of a mix of Turkish lentil soup/mercimek corbasi and daal flavors.

Ingredients:
½ red, white, or yellow onion, chopped
1 clove garlic, minced
2 med size carrots (or 1 large carrot), chopped
1 large potato, peeled & cubed
1 cup red lentils, rinsed & soaked for 30 minutes (uh, or yellow split peas!)
1 tsp cumin
1 tsp coriander
½ tsp cayenne (optional)
½ tsp smoked paprika
1-2 bay leaves
1 tsp sumac
1 tsp baking powder
2 Tbsp olive oil
½-1 tsp sea salt (but pay attention to how much salt is in your broth if you're using a store-bought stock/broth)
4 cups veg broth (or water, or chicken broth)
Dressing:
1 clove garlic, minced
1-2 Tbsp olive oil
1 tsp dried mint (or oregano)
½ tsp apple cider vinegar (or white vinegar, optional)
1 tsp chili flakes (optional)
Garnish:
Fresh cracked black pepper
Lemon wedges
Fresh cilantro and/or mint

Instructions:
1. Warm the broth on med to med-low
2. Put your big boy pot on medium to med-high
3. Into the pot:
- Olive oil, heat
- Onion, carrot & potato, cook a few minutes
- Garlic, cook 1 more minute
- Lentils & Baking powder
- Spices, cook another few minutes
- Pour in broth
4. Bring to boil then down to simmer, cover for 30 min then remove cover & stir occasionally, up to another 15 min
5. Meanwhile, heat pide bread
6. Blend soup with hand blender and re-warm to desired temp
7. Make dressing (low heat, oil, garlic, herbs, spices, vinegar, just a minute or two, then turn off heat)
8. Garnish with black pepper, slice of lemon, and fresh herbs
9. Serve with warmed bread and enjoy thoroughly!!
With no dairy, no meat, and no eggs, this soup's practically healthy! :D

You can of course leave the ham out completely, and add things like pearl barley, butter beans or kidney beans. This healthy soup recipe is a family favourite. It is a filling and tasty lentil recipe, which is low on calories but wont leave you feel hungry.
