Butter Free Chocolate Banana Muffins Recipe

These chocolate banana muffins are supremely rich and moist, packed with double chocolate in the form of both chocolate chips and dutch – processed cocoa powder. Their high-rise domed tops are sprinkled with white sugar for extra crisp and munching. These are the ultimate healthy muffin recipe for you!
You’ll need:
• 1 1/2 cup all-purpose flour
• ¼ cup cocoa powder (unsweetened)
• 1 tsp baking soda
• ¼ tsp baking powder
• ½ tsp salt
• 1 tsp coffee powder (optional)
• 1 ½ cup overripe bananas (mashed)
• ½ cup white sugar + more for topping
• ½ cup light brown sugar (packed)
• 1/3 cup vegetable oil
• 1 tsp vanilla extract
• 1 large egg (room temperature)
• 1 cup mini chocolate chips
Makes 12-14 cupcakes
:: HELPFUL HINTS ::
* Measure your flour correctly (spoon & level method). Adding too much flour will result to dry and crumbly cake when baked. Fluff your flour with a spoon, spooned it into your measuring cup, and use the back of the knife to level it off.
* Let the cupcakes rest in the baking pan for 3-5 minutes. Transfer to wire rack to finish cooling completely.

½ CUP MILK
1 TSPN VINEGAR
1 RIPE BANANA
MASH THE BANANA
½ CUP SUGAR
¼ CUP OIL
MIX WELL
¾ CUP FLOUR
¼ CUP COCOA POWDER
1 TSPN BAKING POWDER
½ TSPN CINNAMON POWDERS
SIEVE
POUR THE BUTTER MILK
MIX WELL
3 TBSP CHOCOLATE CHIPS
BRUSH OIL ON CUP CAKE MOULD
PLACE THE PAPER MOULD
POUR THE BATTER
SPREAD SOME CHOCO CHIP
FIRE UP THE STOVE
PLACE A CURRY PAN
PLACE A WIRE STAND
PRE-HEAT FOR 5-7 MIN.
PLACE THE MOULD
COOK IN LOW MID. HEAT FOR 12-15 MIN.
MUFFIN IS READY

Ingredients:
3 large ripe bananas
2 eggs
1/2 cup (115g) butter, melted
1/2 cup (100g) White Sugar
1/4 cup (50g) Brown sugar
1½ cups (190g) All-purpose flour
1/3 cup (40g) Cocoa power
1 teaspoon Baking powder
1/4 teaspoon Baking soda
1/4 teaspoon Salt
1 teaspoon Vanilla extract
1 cup (175g) Chocolate chips + for topping
Directions:
1. Preheat oven to 360F (180C).
2. In a large bowl stir flour, cocoa powder, baking powder, baking soda and salt. Set aside.
3. In a large bowl, mash bananas, add eggs and whisk until combined. Add melted butter, vanilla extract and whisk until incorporated. Add both sugars and whisk until incorporated.
4. Add dry ingredients to wet, mix until combined and smooth. Add chocolate chips and mix.
5. Pour the batter into a 9x15-inch (23x23cm) loaf pan lined with parchment paper. Sprinkle some chocolate chips on top (optional).
6. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean. Let cool before cutting.

Chocolate Chunk Banana Bread is sweet, thick, fluffy, and, dare I say, moist. ????This recipe is my absolute favourite! Now there might be a lot of banana bread recipes out there, still, this one is exclusive and one of the best loaves I have ever made using super nutritious and healthy chickpea flour.
Ingredients:
1/2 cup butter, softened
6 tsp castor sugar
1+1/2 cup mashed bananas
3/4 cup milk
2 cups chickpea flour
1 tsp baking powder
1/2 tsp baking soda
1 teaspoon cinnamon powder
1/2 cup crushed walnuts
1/2 cup chocolate chunks
Method
1. Pre-heat the oven to 180C. Line a 9” X 4” loaf pan with parchment paper
2. In a bowl mix butter and sugar, until the mixture is fluffy.
3. Add in the mashed bananas and milk to it and mix it well.
4. Now sift in the chickpea flour, baking powder, baking soda and cinnamon powder.
5. Make sure you do not over mix.
6. Fold in the crushed walnuts and chocolate chunks. The batter will be thick.
7. Transfer the batter into the prepared loaf pan and bake at 180C for 40-50 minutes.
