How To make Dymamite Chili with Beans
1/2 c Soaked pinto beans, drained
1 tb Oil or bacon drippings
1 lg Sliced onion
1/2 md Chopped green pepper
1 Minced garlic clove
2/3 lb Boneless pork cut into
-1/2 inch cubes 1/3 lb Stew meat cubed
16 oz Can whole tomatoes
2 tb Chili powder
1 Diced Jalapeno pepper OR
Serrano pepper 1 ts Dried Mexican oregano
2 ts Cumin
1/3 c Dry red wine
Salt to taste Fresh ground pepper to taste 2 tb Tortilla flour mixed in
Water to form a paste Combine water and beans in medium saucepan and bring to boil over medium high heat. Reduce heat and simmer until tender, about 1 hour. Heat oil in large skillet over med-high heat. Add onion, green pepper, and garlic. Saute until tender. Transfer to Dutch Oven and set aside. Add pork and beef to same skillet. Brown well. Stir into vegetables in Dutch Oven. Add beans and their liquid along with tomatoes and seasonings. Mix well, cover and simmer 1 hour. Add wine and cook, uncovered, 30 min. Season with salt and pepper. If mixture is too liquid, stir in some of the tortilla flour paste to thicken.

There are several different ways to make a red chili recipe and this is a competition championship chili recipe so it does not include many of those raw ingredients found in a home version of the traditional comfort food chili recipe such as onions or peppers. In competition, you can't add raw ingredients so you must use powders. If you want to try this at home -- which I recommend because it is DELICIOUS -- you can buy all of the chili powders I named online.

Dynamite Lumpia With Corned Beef And Cheese | Dynamite Lumpia Recipe
Dynamite Lumpia
Dynamite lumpia is perfect as an appetizer, pulutan or snack. It’s also a favorite streetfood here in the Philippines. Its green chili peppers stuffed (usually with sautéed ground beef but in this recipe I used canned corned beef) and strips of cheese then wrap in lumpia wrapper or egg roll wrapper and deep-fry until golden brown. It also a perfect match for beer.

Dynamite Lumpia Recipe
Ingredients
15 pieces siling haba o siling pangsigang (finger chili peppers)
15 piesce lumpia wrapper (spring roll egg wrapper)
260g can corned beef
Quickmelt or cheddar cheese, cut into strips
1 small onion, minced
2 cloves garlic, minced
Cooking oil
Procedure
1. Heat oil in a pan and sauté onion and garlic until limp and aromatic. Add corned beef, cook for 3-4 minutes. Turn-off the heat and let it cool.
2. Slice siling haba or finger chili peppers lengthwise on one side of the chili. Remove seeds and pith.
3. Stuffed chili with sautéed corned beef and strips of cheese. Wrap stuffed chili in lumpia wrapper(egg roll). Dab edges of lumpia wrapper with water to seal.
4. Deep-fry until lightly golden brown in medium to low heat. Serve hot.
Yields: 15 pieces dynamite lumpia
