Dandelion Fritters
Dandelion Fritter Recipe:
2 cups dandelion flowers
1 ¼ teaspoon salt, plus more to taste
1 Tablespoon fresh lemon juice
1 cup all-purpose flour
1 cup fine cornmeal
1/4 teaspoon fresh ground pepper
1/2 teaspoon chili powder
1 large egg
1-2 cups milk
2 cups vegetable oil
When picking dandelions:
-pinch off from tops of stems
-fill medium bowl with 4 cups cool water
-add 1 teaspoon salt and lemon juice
-put dandelions in bowl, push down into water to clean
-dry upside down on paper towels
In medium bowl:
-sift together flour, cornmeal, ¼ teaspoon salt, pepper, chili powder
In a small bowl:
-whisk together egg and milk*
Combine:
-pour egg mixture into flour mixture, stir until combined into a batter
Cook:
-pour 1 inch oil into 9 inch skillet- heat to 375 degrees
-gently dip each flower into batter
-carefully place into hot oil, give plenty of space
-drain on paper towels and salt lightly
*Note:
When making batter, you will begin to learn the proper consistency that you need. You want to add enough milk to make the batter slightly thicker than pancake batter. I would recommend beginning with about 1 cup of milk, stirring, and then adding milk slowly until the batter is a fairly thick consistency.

Dandelions are super easy to find and all parts are edible!

Also, they are good for you!
Dandelions are packed with Vitamin C, Vitamin E, Vitamin A, Calcium, Potassium, Zinc, and Iron.
Be sure to harvest your dandelions from locations that have NOT been treated with herbicides or other lawn chemicals.

In this video 2 of 2, I will walk through a quick recipe to create deep-fried dandelion flower head fritters.
Below is a quick recipe for batter. You can use your own or by a pre-pacakged mix...it is up to you.
1⁄2 cup all-purpose flour
1⁄4 cup cornstarch
1 teaspoon baking powder
1⁄4 teaspoon salt
1⁄2 cup water
1 tablespoon water
1 tablespoon egg, beaten
1 tablespoon vegetable oil
-------------------------------------------
In a mixing bowl, combine the flour, cornstarch, baking powder, and salt.
In a separate mixing bowl, combine 1/2 cup plus 1 T. water, 1 T. beaten egg, and oil.
Add wet ingredients to dry and combine until mixed.
Dip dandelion flower heads yellow side down in batter, and carefully place into hot oil for deep frying at approx. 350-375 degrees.

I make and try some Dandelion fritters! The wonderful wife gives them a thumbs down. the flowers are high in vitamin A, B, and C. they have , zinc, potassium and iron. They have lecithin, that is said to be good for the brain and liver.
