How To make Curry Chicken Pitas
1 lb Boneless, skinless
-chicken breast, -cut into 1-inch chunks 2 tb Margarine
1/2 c Finely chopped onion
1 tb Curry powder
1/2 ts Ground cinnamon
1/4 ts Ground coriander
2 ds Cayenne pepper
2 tb Water
2 Pitas
In a large skillet over medium-high heat melt margarine. Add onion and saute for 2 to 3 minutes. Add chicken and saute 5 to 6 minutes, until cooked through. Add seasonings and water. Stir well until thoroughly blended. Split between the two pitas, putting chicken on top of the pitas and trickling the remainng sauce over them. (Neil decided to fill his pita with the chicken, but I ate mine on the outside, rather than in the pocket. It's good either way. Oh, and make sure your bathroom door is closed when you make this, or your towels will smell like curry when you go to dry off from your shower the next morning...) Ingredients:
6 Tortilla wraps
3 tablespoons Oil
Salt to taste
Black pepper to taste
1-2 teaspoons Paprika
1 Red chili flakes (optional)
1 teaspoon Cumin
1 teaspoon Oregano
600g Chicken tights/breast, cut into bite size pieces
1 tablespoon Mayonnaise, for each tortilla
Lettuce
Cabbage
Cheese of your choice
Directions:
1. In a large bowl mix all the spices with oil.
2. Add chicken chunks and mix until well coated.
3. Heat a large pan over high heat, when hot add the chicken and cook until fully cooked, about 6-8 minutes. Turn the heat off and set aside.
4. Chop the lettuce and cabbage.
5. Take a tortilla, spread 1 tablespoon of mayonnaise, then, layer few tablespoons of the chicken chunks, chopped lettuce, chopped cabbage, shredded cheese. Wrap the tortilla as shown in the video.
6. Heat wrap tortilla from all sides until golden.
7. Serve immediately.

Chicken cooked with curry powder and stuffed in pita bread
CURRIED CHICKEN PITTA SANDWICH
Ingredients
200 gms boneless chicken, cut into thin strips
1 tbsp curry powder
2 pita breads
1 tbsp oil
1 medium onion, chopped
10-12 garlic cloves, chopped
½ cup chicken stock
2 tsps chilli sauce + to drizzle
2 fresh thyme sprigs
Salt to taste
4 spring onion bulbs
2 tbsps yogurt
Method
1. Heat a non-stick pan and heat pita breads in it.
2. Heat oil in a pan, add onion and garlic and saute for 1 minute. Add chicken and curry powder and mix. Add chicken stock, mix and cook and 2 minutes.
3. Add chilli sauce and thyme and mix. Add salt and mix. Reduce heat and cook till chicken is done.
4. Halve pita breads and open out the pockets. Roughly slice spring onion bulbs.
5. Stuff chicken equally into pita pockets. Drizzle 1 tbsp yogurt, a few drops of chilli sauce and a few spring onion slices into each pocket and serve immediately.
