PEANUT BUTTER COOKIE RECIPE
(makes 12 cookies)
Ingredients:
1/2 cup natural peanut butter (125g)
1/4 cup honey or agave (60ml)
1/4 cup unsweetened applesauce (65g)
1 cup ground oats or oat flour (100g)
1.5 tbsp cornstarch or tapioca starch
1 tsp baking powder
NUTRITIONAL INFO (per cookie):
107 calories, fat 2.3g, carb 19.9g, protein 2.4g
Preparation:
In a bowl, add room temperature peanut butter, your sweetener and applesauce, beat with the mixer for 1 minute.
Add half of the oats, cornstarch and baking powder, and gently mix it in, until the dough starts to form.
Add the rest of the oats and mix until everything comes together.
If the dough is too sticky to work with, place the cookie dough in the freezer for 5 minutes.
Scoop the cookie dough (35-40 grams) and roll with your hands, you'll end up with 12 equal balls.
Flatten a bit and transfer to a lined baking tray.
Using a fork, press down each cookie to create authentic criss cross marks.
Bake cookies at 350F (180C) for 10 minutes.
Let it cool on a baking sheet for 10 minutes, then transfer to a wire rack.
When completely cool, serve and enjoy with your favorite milk.

Light and Crispy Peanut Butter Cookies
The Classic Betty Crocker Cookie with crosshatching
These are crispy but not rock hard with the great peanut butter taste.
Betty Crocker was as common as any celebrity chef without the internet to reach the masses, her recipes are tried and true with flawless results.
This recipe is for around 30, 1 Tablespoon scoops, about 2-1/2 inch cookies.
INGREDIENTS
1/2 cup granulated sugar
1/2 cup lightly packed light brown sugar
1/2 cup peanut butter, I used Jif
1/4 cup shortening, I used Crisco
1/4 cup unsalted butter, softened
1 egg, room temperature
1-1/4 cups all purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
METHOD
Pre Heat oven to 375F
CREAM TOGETHER
both sugars, peanut butter, butter, shortening and the egg
SIFT IN AND MIX WELL
flour, baking powder, baking soda and the salt
Scoop out 1 tablespoon portions and roll into balls
place them about 2-3 inches apart
press down slightly to flatten, (not too much,) just enough for the fork
dip the back of a fork every time in sugar and make cross hatches on top of the cookies
Bake for 9-10 minutes or lightly golden brown, turning the pan around at 5 minutes. for a softer cookie take them out at 7-8 minutes
Let them cool for 15 minutes before moving them
They will be soft when they come out but will crisp up once cooled
I speak to you like I would speak to a novice cook or a family member wanting to learn how I make stuff. I don't always measure exact but that's ok, many recipes are just guidelines meant to be altered, of course there are classic recipes and baking that should be followed to a tee but I'm not making a lot of that here. Classic Peanut Butter cookies recipe
☞ this recipe can make 18 cookies
Ingredients
all-purpose flour 90g
unsalted butter 55g
peanut butter 125g (no added sugar is better)
brown sugar 50g
granulated sugar 50g
few drops of vanilla extract
egg ,half, in room temperature
no aluminum baking powder 1.5g
a pinch of salt

Instructions
1. To sift flour, baking powder and salt. Set aside.
2. Cream the butter to get fluffy.
3. Add granulated sugar, mix well. Then add brown sugar, mix until well incorporated.
3. Crack and whisk the egg until thoroughly combine.
4. Pour the half amount of egg to butter mixture, mix well. (This recipe only needs half egg)
5. Scrape down the sides of the bowl as needed. Add in the peanut butter and vanilla extract, continue mixing until smooth and soft.
6. Slowly add the dry ingredients, then mix until the flour just disappears.
7. Use a ice cream scoop or two spoons to scoop the dough, roll into a ball.
8. Place cookie balls on the baking sheet, make sure to leave enough room between each one. Cover and chill the cookie balls for 1 hour in the refrigerator.
8. Take out the dough and allow to sit at room temperature for 10 mins, lightly press down with the palm of your hand. Then use a fork to create a criss-cross pattern.
9. Preheat the oven to 170C and bake for 13 mins until lightly browned on the sides.
10. Remove from the oven. Cool on the baking sheets for 5 mins and then transfer to a wire rack to cool completely. Enjoy.
