How To make Crawfish Mashed Potatoes
2 pounds white potatoes,
peeled, diced
4 tablespoons butter
1 pound crawfish tails, :
cooked
1 teaspoon minced garlic
1 tablespoon chopped chives
Salt and white pepper 1/2 to 1 cup heavy cream
Place the potatoes in a pot and cover with water. Season the water with salt. Bring the potatoes up to a boil and reduce to a simmer. Simmer the potatoes until fork tender, about 8-10 minutes. Remove from the heat and drain. Place the drained potatoes back in the pot and return to the heat. Cook the potatoes for 2 minutes, stirring constantly, to dehydrate the potatoes. In a saute pan, melt the butter. Saute the potatoes in the melted butter for 2 minutes. Stir in the garlic and chives. Season the crawfish with Essence. Using a hand-held masher, mash the potatoes with the remaining butter. Fold in the crawfish and continue mashing. Add in enough cream to the desired texture. Season the mashed potatoes with salt and white pepper. Spoon the two sauces on the bottom of the plate. Using a knife, swirl the 2 sauces together. Mound the potatoes in the center of the sauce. Lay the fish directly on top of the potatoes. Garnish with the fried herb salad, parsley, and peppers.

FULL LIST OF INGREDIENTS:
- 4 Russet Potatoes (Washed and Cleaned)
- Jumbo Shrimp - (Deveined/ Peeled/ Tails Off)
- 5 Strips of Bacon, Chopped
- Mozzarella Cheese (Topping)
POTATO FILLING:
- 1/4 Cup Heavy Whipping Cream + More as Needed
- 1/2 Cup Sour Cream
- 1/2 Cup Sharp Cheddar Cheese
- Scallions (Optional)
- 1/2 Tsp Onion Powder
- 1/2 Tsp Cajun Seasoning
- 1/2 Tsp Black Pepper
CHEESE SAUCE:
- 1 Tsp Butter
- 1 Tsp Minced Garlic
- 3 Tbsp White wine or Chicken Stock (Optional)
- 1 Cup Heavy Cream
- 1 Cup Sharp Cheddar Cheese
- 1 Tsp Cajun Seasoning or to Taste
- 1 Tsp Onion Powder
- Black Pepper to Taste
- 1 Tsp Creole Mustard (Optional)
- Parsley
Best Ever Crawfish Topped Salmon Patties!
Salmon Patties
Yields 12-14 large Patties
5-6 Russet Potatoes
6 salmon fillets
1 lb crawfish or shrimp tails
1 stick (4oz) butter
2 medium chopped onions
1 large, chopped green bell pepper
3-5 Chopped celery stalks
1c Swag Spice Seafood Boil
3 large eggs
2c seasoned flour
2TBS Salt, pepper, herbal seasoning
3-4c Peanut oil for frying
Directions:
1. Bring a pot of salted water to boil the potatoes
2. Drain and mashed potatoes. Set aside.
3. Bring a pot of salted water to boil. Add one stick of butter and 1/4 to a 1/2 cup of Swag Spice. Once the pot is boiling add the salmon fillets. Boil for 3 to 5 minutes or just until flaky. Remove skin and add to potatoes.
4. Add chopped vegetables to spiced water. Let boil for 5 minutes. Drain. Add to mixture. Add salt, pepper, herbs to taste.
5. Add 3 eggs to mixture and blend until all ingredients are incorporated.
6. Create a patty from the mixture and dust with flour.
7. Heat peanut oil on med-hi and fry patties for 4 min each side or until Golden
8. Remove and let drain.
Crawfish topping
1lb rinsed and drained crawfish tails
2 TBS Swag Spice
6 Chopped garlic cloves
1 stick (4oz) butter
1/2 lemon
1/4 heavy whipping cream
1. Melt butter is skillet.
2. Add garlic and sauté until lightly crispy
3. Season crawfish with Swag Spice and toss into skillet. Let simmer for 5 minutes, stirring occasionally.
4. Reduce heat. Add lemon juice and let simmer 5 minutes more.
5. Stir in heavy cream, turn heat to low, cover and let simmer until ready to serve.
Variations- add Parmesan cheese with cream. Use shrimp instead of crawfish.
