3 EGG YOLKS
2 EGGS
1/2 c GRANULATED SUGAR
1 tb GRANULATED SUGAR
1/3 c ALMONDS, finely ground
3/4 ts VANILLA
3 tb CAKE FLOUR
2 EGG WHITES
1/4 ts CREAM OF TARTAR
** BASE ---- ** Preheat oven to 450. Grease a jelly roll pan, line it with wax paper. Grease and flour the paper. Beat the yolks, eggs, 1/2 cup sugar and almonds in large bowl until triple in volume and almost white (about 5 minutes). Stir in vanilla. Sift cake flour over top and fold in with spatula. Beat egg whites with cream of tartar until small peaks form. Gradually add the 1 T. sugar and beat until stiff, fold into egg batter. Pour batter into pan and spread evenly. Bake 7 minutes until lightly browned and springy. Invert onto wire rack. Remove wax paper. Cut out round base for cake, using pan as cookie cutter. Using shaped cookie cutters cut shapes from remaining cake to use on top of cake. Place cake in bottom of springform pan. ** FILLING

Baked cheesecake with eggs-
Ingredients:
Crust
2 + ½ cups (250 grams) crushed biscuits
1/2 cup (113 grams) melted butter (salted)
Filling
1+ 1/2 cup (225 grams) cream cheese, softened
1/2 cup (120 grams) heavy cream
2 tablespoons (15 grams) corn flour
2 teaspoons (15 grams) vanilla
1/2 teaspoon (2 grams) lemon zest
1 cup (306 grams) condensed milk
Topping
2 cups (380 grams) frozen blueberries
1/4 cup (55 grams) sugar
1 tablespoon (14 grams) lemon juice
2 teaspoons (5 grams) corn flour
3 tablespoons (44 grams) water
A main ingredient here is cream cheese. If you can't find cream cheese in your local stores, you can very easily make it at home! Watch my video on How To Make Cream Cheese At Home-
If you don't want to use cream cheese, you can very easily substitute it with hung curd instead.
Another important ingredient is condensed milk. I love using condensed milk in my cheesecakes. You can make condensed milk at home by following this simple recipe:
Homemade Condensed Milk
Ingredients:
2 cups milk
1/2 cup sugar
1/4 tsp baking soda
Process:
In a heavy bottom pan add milk and sugar and bring it to a boil while stirring it constantly.
Cook for atleast 10 minutes or until it reduces to little more than half it’s quantity.
Now lower the flame and add baking soda. Stir it constantly for next 5 to 7 minutes till it becomes slightly thick.
Transfer it in a jar and let it cool down completely.
A perfect baking pan for a cheesecake is a spring form pan. You can find the one I use on this link :

NO BAKE BERRY CHEESECAKE RECIPE
Ingredients
250g | 8.8 oz Biscuits (digestives | graham crackers)
110g | 1 stick | ½ Cup Butter
500ml | 2 Cups Cream
225g | 8 oz Cream Cheese
85g | ⅔ Cup Icing Sugar
Zest + Juice from 1 Lemon
15g | 3 Teaspoons Gelatine Powder
2 Tablespoons Boiling Water
1 Can Berries in Syrup
15g | 3 Teaspoons Gelatine Powder
2 Tablespoons Boiling Water
Instructions
Place the biscuits into a food processor and process until fine crumbs form. Transfer to a small bowl.
Melt the butter and cool before pouring into the biscuit crumbs and mix until well combined.
Pour the crumbs into a lined cake tin and use the back of a spoon to compact down. Place the cake tin into the fridge to set.
Whip the cream until soft peaks form by hand or with a hand mixer. Set to the side.
In a medium sized bowl add the room temperature cream cheese and icing sugar. Beat together with a whisk until smooth and lump free.
Zest and juice the lemon and place into the bowl with the cream cheese. Mix to combine.
Dissolve the powdered gelatine in the boiling water and add to the mixing bowl, stirring to combine.
Add the cream to the cream cheese mixture and fold together until well combined. Pour the cheesecake filling on top of the cheesecake base and smooth. Place into the fridge for a few hours to set.
Blend the can of berries and strain through a sieve into a medium sized bowl.
Dissolve the gelatine in the boiling water and pour into the berries. Mix until combined.
Pour the berry mixture on top of the cheesecake and place into the fridge to set for at least 4 hours or overnight.
Serve topped with berries and fresh whipped cream.
Notes
Instead of gelatine you can also use agar agar or just freeze the cheesecake to set.

Cranberry Cheesecake
Hello friends, today we are making this delicious and beautiful Sweetened Condensed Milk Cranberry Cheesecake! This is a very easy recipe to make and it will be an amazing addition to your holiday table, and the best part is that it doesn’t require any baking, so your oven can be free for all the other dishes you might be baking.
Full recipe:
Cranberry Sauce
3 cups fresh or frozen cranberries (300 grams)
3/4 cup granulated sugar (150 grams)
1/2 cup orange juice (from 2 oranges)
4 tbsp orange zest (from 2 oranges)
Crust
1 1/2 cups graham cracker crumbs (170 grams)
2 tbsp granulated sugar (25 grams)
7 tbsp melted butter (98 grams)
Cheesecake
1 packet unflavored gelatin (7 grams)
4 tbsp water divided
3 cups softened cream cheese (680 grams, or 3 blocks)
1 14 oz. can sweetened condensed milk (396 grams)
1/4 cup lemon juice
Whipped Cream
1/2 cup whipping cream (120 ml)
2 tbsp powdered sugar
Sugared Cranberries
1/2 cup water
1/2 cup sugar
1 cup fresh cranberries

For a 20 cm (8 inch) cheesecake:
For the crust:
250g de biscuits type Amaretti (8.8 oz)
80 g de beurre fondu (1/3 cup)
For the cheesecake filling:
900 g cream cheese (31.8 oz)
200 g granulated sugar (1 cup)
1 to 2 tsp pure vanilla extract
2 large eggs + 2 egg yolks
50 g cornstarch (1/2 cup)
200 g full-fat whipping cream (1 cup)
200 g baking white chocolate (not chocolate chips) (1 1/4 cups)
For the cranberries compote:
400 g cranberries (14.1 oz)
175 g granulated sugar (7/8 cup)
1 tsp pure vanilla extract
1 cinnamon stick
150 ml cooking red wine (2/3 cup)
Zest of an orange + juice of 1/2 orange
For the white chocolate ganache:
250 g baking white chocolate (1 1/3 cup)
85 g full-fat whipping cream (around 1/3 cup… but please weight in grams, cups are not precise!)
