How To make Corn Stuffed Peppers
4 large green or red bell peppers I Tablespoon corn oil 1/2 cup
onions, finely chopped 1 clove garlic, crushed- 1/2 cup cream-style corn 1/2 cup corn kernels 1/2 cup dry corn bread or corn tortillas, crumbled 1/4 cup freshly-minced parsley I Tablespoon red chili powder Salt or salt substitute, to taste Pepper, freshly cracked, to taste 2 cups vegetable broth Preheat oven to 375 degrees. Fill a large kettle to at least half full and bring water to rolling boil. Slice off a top 'lid' from each pepper and scrape insides clean. Plunge shells into water, parboil for 2 minutes, remove from wciter with care, invert on towels, and drain. In a skillet, saut6 onions and garlic until soft. Cool slightly and combine with all other stuffing ingredients and seasonings. Stuff peppers with mixture and set in baking pan. Bake about 40 minutes covered and 10 minutes uncovered at 375 degrees, basting often with vegetable broth.

Vibrant and colourful capsicum stuffed with a herb infused spicy chicken mixture and topped with a melted gooey cheese.
STUFFED CAPSICUM
Ingredients
250 grams chicken mince
4 large mixed coloured capsicums
1 tbsp oil + for brushing
3-4 spring onion bulbs, chopped
1 medium tomato, finely chopped
1 tsp paprika
1 tsp mixed dried herbs
Black pepper powder to taste
Salt to taste
3 tbsps finely chopped green capsicum
¾ cup grated processed cheese
4 processed cheese slices
Tomato ketchup to serve
Green chutney to serve
Method
1. Preheat oven to 180º C.
2. Cut the tops of the capsicums and scoop out the seeds to make cups. Set aside.
3. Heat oil in a non-stick pan, add spring onion bulbs, sauté till translucent. Add tomatoes and mix well. Cook till the mixture is pulpy.
4. Add paprika, dried mixed herbs, black pepper powder, salt and mix well. Add chicken mince, sauté well.
5. Add some water and mix. Add chopped capsicum, mix well. Cover and cook till fully done. Take it off the heat and transfer to a bowl.
6. In the same bowl, add grated cheese, and mix well. Stuff this mixture into individual capsicum cups and top it with a cheese slice on each.
7. Bake it for 10-15 minutes o till the cheese has melted.
8. Serve hot with tomato ketchup and green chutney.

Stuffed Bell Peppers
Ingredients List

4 bell peppers
1 tbsp butter / or oil
250g lean beef mince
2 garlic cloves
1/2 white onion
Tops of bell peppers
Chilli peppers or scotch bonnet (optional)
2 spring onions
Salt and pepper to taste
Parsley
1 tsp all purpose seasoning / or Cajun seasoning
2 tbsp oyster sauce
2 tsp smoked paprika
1/2 cup chicken stock (or water)
1 cup sweet corn / peas etc (put your preference)
1 1/2 cup cooked rice
Mozzarella cheese (or cheese of choice)
for topping the peppers
Fresh parsley as garnish
Bake for 15-20 minutes on 180•C - 200•C

I have been eating stuffed bell peppers for years, and while I have always enjoyed them I never really loved them. This recipe has changed that. This is a fresh, light and clean stuffed pepper done with corn, black beans and barley. Its quick to make, delicious and fun! You can top these peppers with salsa, hummus, guacamole, or just some avocado. Anything goes here!
Ingredients:
1 1/2 cups frozen corn
1 can black beans
(drained and rinsed)
5 green onions
1 lime (juiced)
2 tsp chili powder
1 4 oz can of mild green chilis
1 1/2 cups cooked barley
(you can substitute rice or quinoa)
