Hello everyone! I’m here to share another wonderful CNY cookie recipe! This is a cookie that I will bake every year! It is easy to make, delicious and also very versatile. You may choose to omit the cornflakes or raisins or even replace the raisins with dried cranberries!

Spicy shrimps floss cookies (Hae Bee Hiam/Sambal Udang Cookies)
Ingredients
⦁ 250 grams butter
⦁ 2 cups of plain flour
⦁ 1/2 cup sugar
⦁ 2 eggs
⦁ 1/2 cup of chilli shrimp floss (Hae Bee Hiam)
⦁ 1 egg yolks for egg washing
⦁ 1 tbsp vanilla essence
⦁ Some clingy wrap
Methods
Put flour, butter and sugar into the food processor. Mix until it form a light crumbs.
Whisk egg and vanila essence together, pour over flour mixture, add chilli shrimp floss (Hae Bee Hiam) mix well. Transfer the dough onto a clingy wrap, roll it to a big sausage, tighten both end by twisting the plastic.
Freeze the dough in freezer for 15 mins before baking so dough become hard for easy cutting.
Cut the dough with knife into thin slice, between 0.5 - 0.7 cm should do.
Egg wash the cut dough and bake in a pre-heated oven at 170 degrees celsius for 12-15 mintues or until golden brown.
Once done, let the cookies cool completely and store them in air-tight container, for up to 2 weeks.
Spicy shrimps floss cookies (Hae Bee Hiam/Sambal Udang Cookies)
SPICY DRIED SHRIMPS FLOSS (HAE BEE HIAM, 蝦米香)
25 g dried chillies
100 g dried prawns
50 g shallots
70 g garlic
⅓ cup vegetable oil
2 tbsp sugar
salt to taste, about 1 tsp
Wash dried chillies and cut into 1-inch long pieces. Soak in water till soft (1 hour). Drain and squeeze dry. Wash and soak dried prawns in water for 15-20 minutes till soft. Drain and set aside the water. Peel and wash shallots and garlic. Pound or finely grind all four ingredients, leaving some small dried prawns whole for texture.
Heat oil in a wok till smoking. Add shallots and stir-fry for a few minutes over high heat. Do likewise with garlic, then dried chillies and dried prawns. Fry the mixture for 15-20 minutes, stirring all the time and adding water from soaking dried prawns bit by bit. Mixture is ready when it turns dark brown. Add sugar and mix well. Taste and add salt to taste.

Chinese Almond Cookies Recipe:
In a bowl mix
1 cup All Purpose Flour
1/2 cup Almond Flour
1/2 tsp Baking Soda
1/4 tsp Kosher Salt
In another bowl mix
1/2 cup room temp butter
cream with 1/2 cup sugar
Add 1 egg and mix again
add 1 tsp vanilla
1/2 tsp almond extract
Mix the dry ingredients into the wet. Chill 30 minutes.
Roll into balls, place onto a parchment-lined baking sheet
flatten with a spoon, brush with egg wash and place a raw almond in the center of each cookie. If you'd like small, dense cookies, chill the cookies for 15 minutes before baking.
Bake at 350ºF for 8-10 minutes until golden brown
