Recipe:
Juice & zest of 1 orange
Juice & zest of 1 lime
1 Medium white onion, peeled
2 cloves of garlic, peeled
2 Tablespoons apple cider vinegar
1 Teaspoon of salt
1 Tablespoon of ordinary granulated sugar
7 medium habanero chillis

Though through the years I’ve written several recipes for this iconic, ubiquitous salsa, I’m doing it again—but with a twist. I want you to ask yourself, What version of this salsa do I like?
You see, the ingredients are basically set in stone, but the proportions are not.
The tomatoes add soft sweetness, the onion offers a fresh crunch, and, of course, the cilantro and green chile add herbiness and spice. This salsa is typically seasoned with a little lime and salt. So, if you’re in the mood for a salsa that’s really spicy, you’ll want to add more chile than your neighbor might. I’m a cilantro freak, so I’ll likely be putting in more than you. If I’m weighing everything, I like 4 parts tomato to 1 part onion, but that might not be to your taste.
I know people who want more and other who want less. You’re getting the idea, I think. I’m encouraging you to chop up the tomatoes, then add the remaining three ingredients a little at a time—tasting as you go—to determine what tastes really good to you. Same goes for lime and salt.
In the Yucatán, they make this salsa (called Xnipec) with red onion and habanero chile (I’ll advise you to start with half a chile and work up from there). There they use sour orange juice, which is about as sour as lemon, but with overtones of orange; to achieve a similar flavor, you can add a splash of orange to the lime. Also, I’ve seen versions made with some finely chopped radish, which adds a unique crunch that’s beautiful.

SALSA DE SOYA CON CHILES TOREADOS
Esta salsa lleva el nombre de Salsa Ponzu, la salsa original se mezcla con cítricos, mirin, katsuobushi y/o alga kombu, estos ingredientes son poco frecuentes en la cocina latinoamericana, por lo que aquí les va mi versión mexicanizada, con limón y chiles toreados ¿Cuál es la suya? No existe una receta única, todos tenemos nuestro estilo.
Para los que visitan Sushi Roll, su salsa de soya es muy distinta a la tradicional en la comida asiática o japonesa, nada salada, un con toque de limón y mejor cuando te traen los chiles toreados.
En esta receta trataré de emular su sabor pero sobre todo tener una salsa de soya picosa y muy buena para los platillos y comida asiática que muy pronto les compartiré. Les recomiendo utilizar limón y las naranjas menos agrias posibles, además de usar Salsa de Soya Maggi, ya que no es tan salada.

Ingredients
3/4 cup water
2 Roma tomatoes
5 pasilla chiles
30 chiles de árbol (also known as bird's beak chile and rat's tail chile)
3 dried Habanero peppers
16 garlic cloves
10 peppercorns or 1 tsp black pepper
5 Jamaica flowers (hibiscus)
1 Tbs Apple cider vinegar
Zest and juice of 1 lemon or lime
1/2 Tbs salt (adjust to taste by adding 1/2 tsp at a time)

Pollo:
- 2 lbs de pollo sin hueso
- 1 tbsp (cucharada sopera) de sal
- 1 tsp (cucharadita cafetera) de pimienta
- 1 taza maicena
- 2 tazas de harina
- 1 huevo
- 2 tazas de agua
- 2 tbsp (cucharada sopera) aceite
- 2 tazas de aceite (para freír)
Salsa naranja:
- 1 tbsp (cucharada sopera) de aceite
- 1/4 tsp (cucharadita cafetera) chile para pizza
- 1 tbsp (cucharada sopera) de ajo molido
- 1/2 tsp (cucharadita cafetera) de jengibre molido
- 1/4 de taza de azúcar
- 1/4 de taza de azúcar morena
- 1/4 de taza de jugo de naranja natural
- 1/2 taza de vinagre blanco
- 2 tbsp (cucharada sopera) de salsa de soya
- 2 tbsp (cucharada sopera) de agua
- 2 tbsp (cucharada sopera) de maicena
- 1 tsp (cucharadita cafetera) de aceite de sésamo/ ajonjolí
