How To make Chicken Scallopine w/Mushroom Sauce
MUSHROOM SAUCE:
3/4 c Chicken Broth
1 tb Flour
1 tb Butter
1 t Green Onion - finely
Chopped (white part only) 2 c Mushrooms - thinly sliced
1/2 c Whipping Cream
Salt & freshly ground pepper Nutmeg Cayenne Pepper CHICKEN:
1 lb Chicken Breasts - boned
And skinned, OR VEAL SCALLOPINE:
2 tb Flour
Salt & freshly ground pepper 1 Egg
2 tb Water
1 1/2 c Breadcrumbs
5 tb Olive Oil
2 tb Butter
CHICKEN: Pound meat between sheets of waxed paper until thin. Combine flour, salt and pepper in pie plate. Beat egg with water in shallow dish. Dredge meat in flour; dip in egg mixture; roll well in breadcrumbs. LET SIT ON WAX PAPER FOR 10 MINUTES!!! Heat oil and butter in large skillet over medium-high heat. Add meat in batches and saute until browned, turning once, about 3-5 minutes, adding more oil and butter if necessary. Keep warm and spoon mushroom sauce (see recipe). MUSHROOM SAUCE: Combine broth and flour in small bowl and stir until flour is dissolved. Melt butter in skillet over medium high heat. Add onion and saute until tender, about 1 minute. Reduce heat to medium; add mushrooms; saute 2 to 3 minutes. Stir in broth. Increase heat to medium high and cook until slightly thick, stirring occasionally, about 10 minutes. Blend in cream, salt and pepper. Season to taste with nutmeg and cayenne pepper. VARIATION: For thicker gravy, delete the whipping cream. Gravy will also be browner too. (Or add Kitchen Bouquet to darken sauce.) NOTE: We find that if we are making this for company it is best to use TWO frying pans to speed things up. Also, this is wonderful when served with Fettucine Alfredo and Stuffed Tomatoes!

My Family is OBSESSED with this Chicken Scallopini Recipe
Make this Italian classic Chicken Scallopini Recipe that is pan-fried in olive oil and served with a tasty buttery Mushroom sauce with Parmigiana Reggiano. I promise this will quickly go into your regular rotation once you try it.
Ingredients for this recipe:
• 4 10-to-12-ounce boneless skinless chicken breasts
• 1/3 cup all-purpose flour
• ¼ cup olive oil
• 8 ounces sliced button mushrooms
• 8 ounces sliced baby bella mushrooms
• ½ peeled and small-diced shallot
• 2 finely minced garlic cloves
• 13 tablespoons ice cold unsalted butter, cut into ½” thick slices
• ¾ cup dry white wine
• Juice of ½ lemon, about 1 1/2 tablespoons
• ½ cup finely grated parmigiana Reggiano cheese + more for garnish
• finely minced parsley and lemon zest for garnish (optional)
• coarse salt and freshly cracked pepper to taste
Serves 4

Cook time: 15 minutes
Procedures:
1. Slice the chicken breasts in half widthwise. This is known as butterflying.
2. Place the sliced chicken breast one at a time into plastic zip bag and gently pound it with a mallet or the bottom of a medium-sized pot.
3. Season the chicken breasts on both sides with salt and pepper and briefly set them to the side on a sheet tray lined with parchment paper.
4. Next, in a shallow wide bowl or a cake or pie pan add in the flour and season it lightly with salt and pepper and mix until combined using a whisk or fork.
5. One at a time, gently dredge the pounded seasoned chicken breasts in some seasoned all-purpose flour. Set them to the side on a sheet tray lined with parchment paper until they are all finished.
6. Add some olive oil to a large 12” frying pan over medium heat.
7. After about 90 seconds of the oil heating up, add in the chicken and cook for 3 to 4 minutes or until browned and cooked through.
8. Set the cooked chicken breasts to the side and add in the sliced mushrooms to the pan, turn the heat up to high, and sauté until well browned, which takes about 4 to 6 minutes.
9. Scrape the mushrooms to one side of the pan and in the other side of the pan add in the shallots, garlic, and 1 tablespoon of butter and quickly stir and sauté for 1 minute. Then mix everything together.
10. Deglaze with white wine and cook over high heat until au sec, or almost gone.
11. Remove the pan from the heat, add in the juice of ½ lemon and vigorously mix in the remaining 12 tablespoons of ice-cold butter until emulsified.
12. Next, stir in the cheese until combined and creamy. See chef note below if the sauce breaks.
13. Season the sauce with salt and pepper and then place the chicken back in to heat it back up.
14. Garnish with parsley, more cheese, and the zest of the remaining ½ lemon. Try serving with my Italian Potatoes.

To Make Mushroom Sauce
Mushroom - 600 Gms

Method:
1. Slice the cleaned mushrooms.
2. Take unsalted butter in a pan and add the finely chopped onions to it.
3. Saute until they are transparent. Add in the slices mushrooms.
4. Cook the mushrooms for 2-3 mins.
5. Drop in the finely chopped garlic. Give it all a quick mix.
6. Add salt and pepper powder. Mix it well.
7. After the mushrooms release significant amount of moisture, add the chicken stock and mix well.
8. After about 2-3 mins, add fresh cream and mix well.
9. Simmer the sauce for about 5 mins.
10. Turn off the stove and keep it aside.
11. Take cleaned chicken breasts in a bowl.
12. Add chopped garlic, salt, pepper powder, paprika powder, lemon juice, oil, chopped coriander leaves and rub it all onto the chicken pieces on all sides.
13. Marinate the chicken for about 10 minutes.
14. Take a grill pan, apply oil over the base and place the marinated chicken breasts on it.
15. Grill them for 7 mins on a medium low flame.
16. Brush some oil over the chicken if needed for it to have that crispy texture here and there.
17. Flip the chicken pieces to the other side after 7 mins. Cook them for 7 more mins.
18. That's it, grilled chicken is ready.
19. Serve the mushroom sauce as a base on a plate and place the grilled chicken over it. Garnish with finely chopped coriander. Also serve some garlic bread by the side for best experience.
Mushroom sauce is a nice, rich dish that could form a base for wonderful bread or meat. Even if you don't have anything to eat with it, you can simply enjoy it as it is because it is literally loaded with lot of flavors. I served it with grilled chicken but like mentioned earlier here, you can also have it with some nicely toasted bread or even herbed rice. Get some nice mushrooms next time and give this a try. Enjoy it for special dinners with your loved ones.
