How To make Chicken with Shiitake Mushroom Sauce
1 c Nonfat cottage cheese
1/2 c Evaporated skim milk
1/4 c Nonfat cream cheese
1/2 c Finely chopped onions
1/2 c Sliced sun-dried tomatoes
1/2 c Dry white wine
1 ts Finely chopped garlic
2 c Sliced button mushrooms
1 c Sliced Shiitake mushrooms
1 1/2 c No-salt-added chicken broth
2 tb Low-sodium soy sauce
1 ts Lemon juice
1/4 ts Dried thyme
4 ea Boneless, skinless chicken
-breast halves (4 to 5 oz. -each) 1 ts Cornstarch dissolved in
1 tb Water
1 tb Finely chopped fresh basil
Whirl cottage cheese, evaporated milk and cream cheese in a blender until smooth. Set aside 1/2 cup. Refrigerate remainder for another use (such as to make creamy soups). Combine onions, tomatoes, wine and garlic in a large non-stick skillet. Cover; cook over medium heat 2 minutes. Stir in mushrooms, broth, soy sauce, lemon juice and thyme. Add chicken. Cover and simmer 5 minutes. Turn chicken; cook 5 minutes longer. Transfer chicken to a plate. Cover. Stir cornstarch mixture into the skillet. Add the cheese mixture. Boil 1 minute. Pour sauce over chicken breasts and sprinkle with basil. Serve at once. Makes 4 servings. Approximate nutritional analysis (per serving): 215 calories; 34g protein; 10g carbohydrate; 2g fat (9% of calories); 2g fiber; 71mg cholesterol; 393mg sodium; 39% of the Daily Value for vitamin B6; 27% for riboflavin. 1 kg chicken wings, no tips, cut at joints
1 knob ginger, slice thinly
1/2 bulb garlic, peel and chop
1 handful dried mushrooms, soaked until soft
Marinade for Chicken
3 Tbsp oyster sauce
4 Tbsp corn starch
Seasoning Sauce
1 Tbsp sugar
1/2 Tbsp corn starch
3 Tbsp Shaoxing wine
2 Tbsp soya sauce
2 Tbsp dark soya sauce
4 Tbsp oyster sauce
1 C water

Chicken and Shiitake Mushroom Stir Fry
Ingredients
2 chicken breasts
25 g Shiitake Mushrooms
4 cloves garlic
1 knob ginger
1 stalk spring onion
1 long red chilli
Marinade
ingredients
1 tbs corn starch
1 tbs soy sauce
1 tbs Shiaoxing wine
1 tbs sesame oil
1/4 tsp baking soda
Stir Fry sauce
ingredients
1 tbs soy sauce
1 tbs brown sugar
1 tbs oyster sauce
1 tbs sesame oil

Chicken with Shiitake Mushroom Recipe
Written recipe:
Marinate Chicken
2 Chicken Breasts
2 tsp. minced Garlic
2 tsp. chopped Shallots
1 tsp. Oyster Sauce
1 tsp. Sugar
Pinch of Ground Black Pepper
Cooking the dish
2 Tbsp. Olive Oil
2 tsp. minced Garlic
2 tsp. chopped Shallots
2 oz. Shiitake Mushrooms
1 Carrot
1 1/2 cup Water (add more as needed)
1/2 tsp. Kosher Salt
sliced Onions
Ground Black Pepper
Marinated Chicken
Cut 2 Chicken Breasts into thick slices. Cut 1 Carrot. Soak 2 oz. Shiitake Mushrooms until soften. Rinse the mushrooms then cut. Marinate the chicken, add in 2 tsp. minced Garlic, 2 tsp. chopped Shallots, 1 tsp. Oyster Sauce, 1 tsp. Sugar and Pinch of Ground Black Pepper. Mix well, set aside for 1 hour.
In the mean time, drain the mushroom and set aside. Boil the carrots and set aside.
Using a pan add in 2 Tbsp. Olive Oil, 2 tsp. minced Garlic, 2 tsp. chopped Shallots and saute for a few seconds. Add in the marinated Chicken. Add in the Shiitake Mushroom and Carrots. Add 1 1/2 cup Water (add more as needed). Add in 1/2 tsp. Kosher Salt and let it simmer until the chicken is cooked. Then add in the sliced Onions and some Ground Black Pepper. Mix well and serve.
