How To make Chewiest Granola Bars
1 c Brown sugar
1/2 c Light corn syrup
1/2 c Vegetable margarine
2/3 c Peanut butter
2 ts Vanilla extract
1/2 c Sunflower seed
3 c Quick oats
1/2 c Coconut, grated
1/3 c Wheat germ
1/2 c Raisins
1 c Carob chips
1 Other nuts or dried fruit
You may substitute 1-1/2 c crisped rice for 1-1/2 c of the oats. Preheat the oven to 350 degrees F. Coat the inside of a glass 9x12 baking dish with light vegetable oil. In a large bowl, combine the sugar, corn syrup, vegetable margarine, peanut butter and vanilla extract, and stir well to the consistency of a paste. Stir in remaining ingredients and work the mixture so that several large clumps adhere together. Using your fingers, press the mixture into the baking dish. Bake at 350 degrees for 15-20 minutes until the preparation turns golden brown. Allow to cool completely before cutting into bars.

HEALTHY GRANOLA BARS | chewy chocolate chip granola bars + gluten-free!
This is the perfect batch of homemade chocolate chip granola bars. They're the ideal portable snack that strikes a balance between sweet and salty. But most importantly - they nail that chewy texture we all know and love in a classic granola bar.
You know I always look for ways to give a healthy, homemade spin to packaged foods. So today, it was about time I made my own chewy chocolate granola bar recipe! And one that's naturally gluten-free (of course). These healthy granola bars are the perfect snack idea for the afternoon munchies or back-to-school lunch boxes. Enjoy!

Granola Bars Recipe:
In a saucepan on low heat, mix together
1/2 cup natural smooth peanut butter or 1/3 cup if using regular peanut butter like JIF
1/4 cup honey
1 tsp vanilla extract
1/2 tsp kosher salt
*Make sure that the mixture is still semi runny and does not clump together. If it does, add 1-2 tsp of oil to thin out.
In a bowl mix
2 cups rolled oats
1/2 cup raw almonds
1/3 cup chopped dried dates
1/3 cup chopped dried sour cherries
2 tbsp shredded coconut flakes
2 tbsp chia seeds
Then add the peanut butter mixture, mix in with the dry ingredients.
Pour out into a parchment lined 8x8 baking pan, press down firmly.
Bake for 20-25 minutes at 350ºF until golden brown.
Let cool and cut into bars!
