Hi, it’s Kristi in the Rada Cutlery kitchen, and today I want to show you how to make delectable cherry pinwheel cookies.
Combine 1 cup butter and 1 cup sugar in a large mixing bowl. Mix in 1 teaspoon vanilla and 1 egg until combined. Stir in 2 ½ cups flour until incorporated. Divide the dough in half. Cover a cutting board with plastic wrap and use another piece of wrap to press out half the dough into an 8 inch square.
Spread half a cup of chopped cherries over the dough to within a half inch of the edges. Use the wrap to roll up the dough. Pinch the edges of the dough to seal. Wrap tightly and refrigerate for at least 2 hours or until the dough is firm. When the dough has set, preheat your oven to 375 degrees. Line a baking sheet with parchment paper and set aside.
Cut ¼” slices from the roll and place on the baking sheet. Bake for 6 to 8 minutes or until the bottoms of the cookies are lightly browned. Let the cookies cool on the baking sheet for 2 minutes before moving to a wire rack. And there you have delicious cherry pinwheel cookies! Be sure to subscribe to our YouTube channel, and visit our website at RadaCutlery.com.
