• ½ cup butter, melted
• ⅔ cup sugar
• 2 large eggs
• 1 cup buttermilk
• ½ teaspoon baking soda

✅Instructions
1️⃣ 00:00:14 - Preheat the oven to 375 degrees. Grease a muffin tin or line it with cupcake liners.

Cornbread Biscuits-SHORT VERSION
Sour Cream and Onion Cornbread Biscuits
1-1/4 cup YELLOW CORNMEAL
1-1/4 cup ALL PURPOSE FLOUR
1 teaspoon SALT
1/2 teaspoon BLACK PEPPER
1/2 teaspoon BAKING SODA
10 tablespoons COLD BUTTER, diced
1 cup SOUR CREAM
4 GREEN ONIONS, sliced thinly
2 teaspoons HONEY or sugar
1/4 cup BUTTER, melted
FLAKY SEA SALT
Preheat oven to 425 degrees F. In a large bowl combine cornmeal, flour, salt, pepper and baking soda. Whisk together. Add cold butter and cut in with a pastry cutter or use your hands to work into the dry ingredients until the butter is in pea sized pieces. Make a well in the middle of the mixture and add sour cream, green onions and honey in the well. Fold until the batter comes together. Turn onto a lightly floured surface and knead a couple of times to bring it together into a tidy ball. Pat into a circle and cut 12 to 13 rounds using a 2 inch biscuit cutter. Place on a well buttered cast iron skillet. Brush the tops with melted butter and sprinkle with sea salt. Bake 15 to 20 minutes until golden.

I learned to always keep cornmeal and all-purpose flour in my pantry… this ingredients are sure very handy to make a quick dough for Cornmeal Biscuits… fast, delicious, you will not have a crumb left over!
1 ¼ cup or 300mL buttermilk
1 tbsp. or 15mL honey
1 cup or 181g cornmeal
2 cups or 270g all-purpose flour
1 tbsp. or 10g baking powder
½ tsp baking soda
1 tsp or 6g salt
12 tbsps. cold unsalted butter cut in pieces
Mix 1-1/4 cup buttermilk with 1 tablespoon honey.
Mix 1 cup or 270g all-purpose flour with 1 cup or 181g Cornmeal, 1 tbsp or 10g baking powder 1/2 tsp or 2g baking soda 1 tsp or 6g salt.
Add 12 tbsps. or 169g cold unsalted butter in pieces.
Add buttermilk and honey mixture.
Sprinkle flour on working surface.
Sprinkle all-purpose flour to dough and knead until smooth.
Spread the dough flat about 3/4 inch thick.
With a 2 1/2 inch biscuit cutter cut out biscuits and transfer to prepared baking sheet with parchment paper.
Bake at 350ºF or 175ºC for 10-12 minutes or until golden brown.
