SIMPLE BUT TASTY RICE AND BULGUR PILAF RECIPES

In this episode, I'd like to share with you two simple pilaf recipes, takes about 5 minutes to prepare, then easy to cook. If you need to make a tasty side dish but don't have much time, then these recipes are might be for you. I use hot water in the recipe, but you can also use chicken stock for its amazing flavor, if you have on hand. Just be careful when adding salt to a dish, where using stock.

Rice pilaf recipe starts at 0.30, and Bulgur pilaf is at 3.08.
INGREDIENTS FOR SIMPLE RICE PILAF (2-3 servings)
1 cup long-grain white rice
2 cups hot water (or chicken stock)
2 tbsp vermicelli
1 tbsp lemon juice
1 tbsp olive oil
1 real tablespoonful cubed butter
1/2 tsp or to taste salt
A pinch of white pepper
A pinch of granulated sugar
DIRECTIONS
Rinse the rice thoroughly under cold water and drain.
Squeeze 1 tbsp lemon juice on top, mix, set aside.
Heat 1 tbsp olive oil, over medium low heat, in a large-medium size pan.
Add 2 tbsp vermicelli, and sautee until golden brown, stirring occasionally.
Add the rice, mix.
Sprinkle salt, white pepper and a pinch of sugar on top.
Add butter and mix until melted.
Add 2 cups hot water (or chicken stock).
Cook for about 30 seconds over medium heat, stirring constantly.
Check the seasoning, then reduce heat to the lowest possible setting.
Cover and cook until the water is absorbed and the rice is tender, for about 12-14 minutes.
Check to see if all of the water is absorbed, then turn off the heat.
Cover with paper towels then the lid, let rest for about 10 minutes.
Mix gently and serve.
INGREDIENTS FOR SIMPLE BULGUR PILAF (2-3 servings)
1 cup coarse bulgur
2 - 1/4 cups hot water (or chicken stock)
1 tbsp olive oil
1 real tablespoonful cubed butter
1 tbsp tomato paste
1 tsp sweet paprika
1/2 tsp or to taste salt
A pinch of black pepper
A pinch of granulated sugar
DIRECTIONS
Rinse the bulgur thoroughly under cold water, drain and set aside.
Heat olive oil and butter in a large-medium size pan, over medium low heat.
Add sweet paprika and cook for about 1 minute, stirring constantly.
Add tomato paste, mix well.
Add 1/4 cup water, mix.
Add bulgur and mix well.
Sprinkle salt, black pepper and a pinch of sugar on top, mix.
Add 2 cups hot water (or chicken stock).
Cook for about 30 seconds over medium heat, stirring constantly.
Check the seasoning, then reduce heat to the lowest possible setting.
Cover and cook until the water is absorbed and the bulgur is tender, for about 12-14 minutes.
Check to see if all of the water is absorbed, then turn off the heat.
Cover with paper towels then the lid, let rest for about 10 minutes.
Mix gently and serve.
Make sure to add a small splash of water, before reheating the pilafs.

BULGUR PILAF // One Pot Meal // Simple Vegan Recipe
This recipe is adapted version from @refikaninmutfagi , my favourite Turkish chef.
One pot meal, simple to make filing, nutritious and very delicious.
Served with yogurt (vegan version) and pickles, good fresh and even better as leftovers, try it!
Ingredients:
2 cups ground bulgur
2 medium onions
2 small carrots
5 cloves garlic
2 tbsp hot red pepper paste
1 medium tomato
1 medium zucchini
400 g boiled black beans
500 - 600 ml water
1 tbsp dried mint
1 tsp dried thyme
1 tsp oregano
1 tsp salt
1 tsp ground black pepper
fresh parsley
plant based yogurt
pickled cucumbers

1 big onion
5 tbsp olive oil
3-4 sweet green peppers
1 capia peppers
1 tbsp each tomato and red pepper paste (skip pepper paste if you can't find)
2 cups coarse bulgur
1 tsp salt, black pepper, paprika
4 cups hot water or meat stock

This creamy bulgur pilav is full of veggies; carrot, leeks and delicious mushrooms which are treated like meat. Bulgur is healthy, easy to make, economic and always delicious! Plus a great way to eat vegetables.

Servings:2-4
Difficulty: Medium
Prep time: 5 minutes
Cooking time: 20 minutes + 15 minutes resting
2 leeks, sliced diagonally
300 g mushrooms, roughly chopped
3 large cloves of garlic, thinly sliced + 3 large cloves of garlic, thickly sliced
1,5 cups coarse bulgur
1 heaped tablespoon tomato paste, or you can use 100-150 g tomato puree
1 carrot, grated
1 heaped tablespoon meatball seasoning mix ( , or you can find the spice mixture below for this recipe)
1 tablespoon butter
6 tablespoons olive oil
4 cups boiling water
5 pinches of salt
A pinch of red pepper, optional
For serving,
Strained yoghurt
Parsley
Red pepper flakes
Sour pickle juice
• Heat a large frying pan (preferable ceramic coated). Pour in 2 tablespoons olive oil, then add the leeks and toss with a good pinch of salt on high heat until partially browned. Transfer them on a plate.
• Pour 2 tablespoons olive oil to the pan and toss the mushroom like leeks. Add in thinly sliced, 3 cloves of garlic. After a minute add the meatball mix and toss for another 30 seconds. Add the mushrooms on leeks. Wipe the pan if there is any spice left to prevent them burning.
• Add in the butter 2 more tablespoons olive oil to the pan. After butter melted, add the rest of the garlic. Add the tomato paste and mix until paste loosen.
• Mix in the bulgur and stir until all of the bulgur mix with the tomato paste.
• Put back in the leeks and mushrooms. Add 3 pinches of salt and red pepper. Give it a good stir.
• Pour in the boiling water and transfer the pan on a smaller burner. Simmer for 15-20 minutes until some juice of the pilav left. This way pilav will be creamy and not dry.
• Then, turn off the heat and cover the pan with a clean kitchen towel. Put the lid on and let it rest at least 15 minutes.
• After resting, mix in the carrot and transfer on a serving dish. Make a hole in the centre and place the yoghurt in. Then sprinkle some parsley and red pepper. If you have some pickle juice pour a ladle on the pilav and insanely delicious, vegetarian dream bulgur pilav is ready!
To make the spice mix, mix a teaspoon of cumin, a teaspoon red pepper, a levelled teaspoon garlic powder and half teaspoon black pepper.

How to make Bulgur Pilaf with green beans?
A list of materials :
500 grams of green beans
Half a tea glass of olive oil. ( 50 ML ).
1 tea glass of cold water. ( 100 ML ).
Chopped 2 onions
1 water glass of coarse bulgur. ( 150 grams ).
Red pepper flakes
Black pepper
Salt
2 water glasses of boiled water. ( 400 ML ).
3 tablespoons of butter. ( 40 grams ).
Your favorite yoghurt
