How To make Broiled Orange Roughy with Salsa Glaze
1 tb Lime juice 2 tb Salsa bottled)
1/2 c Lowfat mayonnaise
2 tb Plain lowfat yogurt
pn Cayenne pepper 2 lb Orange roughy fillet
(6 Pcs ) Ground black pepper to Taste Lime wedges
Preheat broiler. In a small bowl, combine the lime juice, salsa, mayonaisse, yogurt and cayenne. Place fish on a broiling pan and sprinkle with pepper. Spread half the glaze on top of the fish. Broil the fish about 3 inches from the heat for 5 minutes. Spread with remaining glaze and continue broiling the fish until done. Serve with lime wedges.

200 grams butter ( salted or unsalted)
50 ml dry white wine
25 ml white wine vinegar
30 grams shallots
50 ml cream (heavy cream)
salt and white pepper to season
a pinch of cayenne pepper (optional)
the shallot can be discarded or kept in the sauce ( it is up to you)
if you keep the shallot I would advise cooking them first in 50 ml fish fumet then start the reduction

Hello There Friends, Today I'm going to show you all about BUTTER SAUCE or a Beurre Blanc! One of my Favorite Sauces to make.. obviously, SO MUCH BUTTER! This sauce is best served with a white fish, although it can be served with whatever you like. I'm sure it would be delicious! How to make Lemon Butter Sauce
Yield 3oz of sauce
Ingredients:
3 Tablespoons lemon juice
7 Tablespoons Salted butter
1 Tablespoon chopped parsley
Salt and Pepper to taste
Sugar to taste (if sauce is too acidic)

WORLD FAMOUS FISH IN SAUCE RECIPE (Featuring Orange Roughy Fish); CAN APPLY TO OTHER FISHES
Hey guys! Welcome back to another video. Today, I wanted to make a dish that I'm sure all of you pescatarians out there will greatly appreciate! I present you all with...wait for it...
my world famous fish in sauce recipe!! Don't fret If you don't have access to orange roughy fish, this sauce in particular pairs well with many different types of fish, ranging from SALMON, TO RED SNAPPER, to even Sea Bass (in my opinion). I hope you will give this recipe a try & let me know what you think!
The recipe goes as following:
1) Soaking the fish in an acidic liquid base prior to cooking for at least 30 minutes
2) Marinating the fish in 2-3 TBSPS worth of pesto sauce for 30-60 minutes. Don't throw away the excess sauce, we will be pouring it into our dish later on.
3) 1 Cup of Corn Oil & 1 TBSP of butter
4)Sliced purple onions, chopped tomatoes, 1 green bell pepper, few garlic cloves.
5) 1 TBSP OF Tapatio Hot Sauce
6) 1/2 TSP OF Tabasco
7) 1/4 TSP OF Siracha Hot Sauce
8) White Iodized Salt (1/2 TSP)
9) 1 Lime
10)3 Cloves
11) 1 TSP of Adobo Powder
12) 1/2 TSP Creole Seasoning (Wasn't shown in this video)
