How To make Brandied Cherry Clafouti
3 c Drained black or red
Cherries (preferably canned in Water) 1/4 c Brandy or cognac
2/3 c Sugar
Butter for pan 2/3 c All-purpose flour -- sifted
1 c Milk
3 lg Eggs
1 tb Vanilla extract
1/8 ts Allspice
1 tb Lemon zest
1/8 ts Salt
Confectioners' sugar
In nonreactive bowl, mix drained cherries, brandy and 1/3 cup of the sugar. Let sit for 1 hour.
Preheat oven to 425 degrees. Butter a 9-inch pie pan. Place flour in medium bowl and make a well in the center. Drain cherries, reserving the liquid. Pour liquid into a blender and add remaining 1/3 cup sugar, plus the milk, eggs, vanilla, allspice, lemon zest and salt. Blend well. Pour liquid mixture into the well in the flour and blend into a smooth batter. Spread cherries evenly in prepared pan. Pour batter over fruit. Bake in the preheated oven for 5 minutes, then reduce heat to 350 and bake 45 to 50 minutes more until claf outi is puffy and golden. (A sharp knife inserted in the center should come out clean.) Let cool. Dust with confectioners' sugar and serve warm. All The Measurements For The Recipe
For The Cherries
400g cherries
45g sugar
1 tbsp approximately Cherry brandy
For preparing the dish
15g unsalted butter
30g sugar
Batter
2 egg yolks
2 whole eggs
30g sugar
50g flour
70ml whole milk
70ml double cream or whipping cream
1/2 tsp vanilla bean paste or vanilla extract
To Finish
1-2 tbsps sugar

INGREDIENTS (serves 4)
For the Cherry Marinade:
⦁ 450 Grams (1lb) good quality black cherries (pitted)
⦁ 3 tbsp caster sugar
⦁ 3 tbsp cherry liqueur or cherry brandy
For the Clafoutis Batter:
⦁ 50 Gram (2oz) caster sugar
⦁ 2 full eggs and 1 egg yolk
⦁ 200 ml milk
⦁ 100 ml double (heavy) cream
⦁ 1 tbsp melted butter (melt until it is a light brown colour)
⦁ Pinch salt
⦁ Generous tbsp plain flour
⦁ Few drops vanilla extract or essence or a fresh vanilla bean (split open and seeds removed) added to milk
To Coat the Dishes:
⦁ A few spoons of caster sugar
⦁ 2 tbsp butter

I chose cherries to make this clafoutis the perfect summer dessert! I made this clafoutis gluten-free by using cassava flour instead of all-purpose flour.
