ingredients
4 lb pork belly or pork shoulder cut into 1-inch cubes
1 large onion, chopped
15 garlic cloves, chopped
1 cup chicken stock
1/4 cup oyster sauce
1/4 cup hoisin sauce
1/4 cup dark soy sauce (dark in color no sweetness)
1/4 cup honey
1/4 cup shaoxing wine or sake
2 cups water
handful cilantro
cucumber
red or green chili
crushed peanut or sesame seeds

Main Ingredients

FROZEN SEA CUCUMBER (2 pcs - 600g)
GINGER (3 SLICES)
SPRING ONIONS (1 STALK)
DRIED MUSHROOMS (6 PCS)
OYSTER SAUCE
FEW DASH OF WHITE PEPPER
SUGAR (1/2 TEASPOON)
SOY SAUCE ( 2 TABLESPOONS)
Sauce Ingredients

OYSTER SAUCE (1 TABLESPOON)
SOY SAUCE (3 TABLESPOONS)
FEW DASH OF WHITE PEPPER
DARK SOY SAUCE (1 TEASPOON)
Prepare Sauce
-----------------------------
CHOPPED SPRING ONIONS (1 STALK)
COOKING OIL (2 TABLESPOONS)
GINGER (3 SLICES)
SHALLOTS (3 PCS)
GARLIC (1 CLOVE)
RICE WINE (1 TABLESPOON)
MUSHROOMS WATER (200ml)
CHICKEN STOCK (200ml)
SUGAR (2 TEASPOONS)
CORN STARCH SLURRY (2 TABLESPOONS)
FEW DROPS OF SESAME SEED OIL
Blanch Baby Bok Choy
-----------------------------------
BOIL WATER
ADD OLIVE OIL (1 TEASPOON)
BABY BOK CHOY (4 PCS CUT INTO HALF)
1) Defrost sea cucumber and clean with water. Cut approx 4cm length.
2) Boil 1 pot of water, add in ginger, spring onions. Blanch sea cucumber for abt 1 min, drain and set aside.
3) Dried mushrooms soak in water for an hour. Keep the mushroom water. Remove stem.
4) Marinate mushrooms with oyster sauce, white pepper, sugar & soy sauce.
5) Prepare sauce.
6) In a wok, heat cooking oil over medium heat. Add in ginger, shallots, spring onions. Stir fry till spring onions slightly brown.
7) Add in mushrooms and saute for 1 min. Add in rice wine and cover for 1 min.
8) Add in sauce, mushroom water, chicken stock. Add in sugar, and cover for 10 minutes
9) Blanch baby bok choy, drain and arrange on plate.
10) After 10min, add in sea cucumber. Turn to low heat and braise for 15min.
11) Once done, remove sea cucumber and mushrooms, remain 200ml sauce in wok *Extra sauce can keep for other dishes. Add in corn starch slurry and few drops of sesame seed oil.
12) Once the sauce thicken, add in mushrooms and sea cucumber.
13) Quick stir and serve on top of baby Bok Choy.

On the eve of Lunar New Year, we Chinese usually have reunion dinner with our family as symbolic gesture of giving thanks for the year that has passed as well as to celebrate the coming of a brand new year. However, unlike our usual family dinners, we will prepare more complicated & in a way more indulgent dishes as part of the celebration. This Braised Pig's Stomach with Mushrooms & Sea Cucumber is an excellent dish to be added on your reunion dinner menu.

Ingredients:
Serves 6
1 piece of cinnamon bark
1 piece of star anise
1 teaspoon of white peppercorn
1 bulb of garlic - with skin intact
1 thumb size ginger - smashed
50ml of chicken stock
200ml of the liquid which was used to soak your mushrooms
1 tablespoon of low sodium light soya sauce
1 tablespoon of oyster sauce
2 tablespoons of Chinese rice wine
1 piece of pig's stomach (aka hog maw) - cleaned (for our Pig's stomach cleaning tutorial, please click here:
4 extra large Chinese mushrooms
1.5 cups of water
150g of long cabbage
Some broccoli as garnish
1 piece of sea cucumber
0.5 tablespoon of premium dark soya sauce
0.5 teaspoon of sugar
Some cornstarch solution to thicken the sauce
Stewed Pork with Hairy Marrow
INGREDIENTS:
Pork Belly
Hairy Marrow
Dried Mushroom
Ginger
Garlic
MARINATE FOR CHINESE MUSHROOM:
1 Tsp Light Sauce
1 Tsp Oyster Sauce
1/2 Tsp Oil
Water
SAUCE INGREDIENTS
2 Tbsp Light Sauce
1 Tbsp Oyster Sauce
1/2 Tbsp Dark Sauce
THICKENING SAUCE:
1 Tbsp Cornstarch
1/2 Bowl Water
PROCEDURE:
* Soak dried mushroom in hot water until soft. Marinate for 15 min.
* Scald pork for 3 min.
* Heat oil, saute garlic and ginger until fragrant, add pork after 2 min add mushroom, mix well and add water. Cover let it boil, switch to medium heat and stew for 40 min.
* Add Sugar and Hairy Marrow
* Simmer 15 min
* Add sauce ingredients, mix well, leave 5 min. Add thickening sauce leave another 3 min. Stir well and serve with sauce.
