3 4 peppers, diced
3 4 Tbsp chick-pea flour
1 2 Tbsp oil ( i prefer peanut
Oil) 1 pn Turmeric
1 2 tsp chilli powder (to
Taste) Salt to taste 1 T Cumin seeds
1/2 t Mustard seeds
x Optional - peanuts, chana Dal, urad dal - this makes It crunchy x Optional - a pinch of Asafoetida) heat oil in a pan. add mustard seeds when the oil is smoking. Wait for the seeds to sputter. Add cumin seeds, (optional) dals, peanuts, asafoetida. Drop the peppers in. Add turmeric, chilli powder and salt. Saute till the peppers are slightly tender. Add the chickpea flour and mix well. For Gravy:
2 Tsp oil

2 Tbsp melon seeds (Magastari Seeds)
1 Tbsp sesame seeds
1 Tbsp coriander seeds
1 Dry red chili
1 Inch ginger roughly chopped
3 Tomatoes roughly chopped
2 Celery stalks roughly chopped

Sauté Bell Peppers:
2 Cups bell peppers any choice of color, cut into cubes
2 Tsp oil
Salt to taste
1 Tsp red chili powder

Ingredients and Method
1 Onion
2-3 Bell peppers
4 medium size potatoes
2-3 tbsp oil
1/2 tsp cumin seeds
3-4 garlic cloves
1 tsp salt ( adjust as per your taste)
1/2 tsp Turmeric
2 tbsp Tomato Paste
1 tsp dried fenugreek leaves (Kasoori Methi)
Optional: Red chilli pwd
Method:
Chop onions, potatoes and peppers.
Heat oil in a pan or wok and add cumin seeds. After 30 secs, add onions, garlic, salt and turmeric.
After 2-3 mins, add potatoes, bell peppers. Mix well. Cover and cook for 7-8 mins.
Add tomato paste. Mix well and cook until almost done. Add dried fenugreek leaves ( Kasoori methi) and give another 5 mins. Ensure potatoes are tender and everything is fully cooked before serving :)
Indeed a great side dish.

Paneer Capsicum Masala | Paneer Capsicum Sabzi | Paneer Capsicum Recipe | Paneer Shimla Mirch Masala | Paneer Baby Corn Masala
Ingredients:
- Paneer, cut into 1 cubes - 200 gms
- Onion petals of 1 medium onion
- Green capsicum / Bell pepper, diced- ½
- Red capsicum / Bell pepper, diced - ½
- Yellow capsicum / Bell pepper, diced - ½
- Baby corn, tender ones (optional ) - 4 - 5 nos.
- Onion, finely chopped - 2 medium
- Ginger-garlic paste – 1 1/2 tsp
- Tomatoes, red ones – 2 small
- Cumin (Jeera) seeds – 1 tsp
- Turmeric powder – ½ tsp
- Red chilli powder - ½ tsp
- Coriander powder - 2 tsp
- Kashmiri Chilli Powder – 1 tsp
- Garam Masala powder – ½ tsp
- Kasuri Methi – 2 tsp
- Fresh Cream – 3 tbsp
- Salt - about 1 tsp or to taste
- Oil – 4 tbsp
Preparation:
- Cut the paneer into 1 inch cubes.
- Finely chop 2 medium onions
- Cut the Baby Corn into 1 pieces
- Grind the two tomatoes
- Dice the green, red & yellow capsicum / bell peppers into cubes. All should be of uniform size.
- Take out petals of one medium onion.
Process:
- In a frying pan, add 1 tbsp oil.
- Add the paneer cubes & lightly fry on both sides. Remove
- Heat 3 tbsp oil in a Kadhai. Add the whole cumin seeds. Once it crackles, add the finely chopped onions & fry till yellowish in colour .
- Now add the ginger-garlic paste & fry for 2 mins
- Add the tomato purée or paste & fry for 2 mins .
- Add the turmeric powder, red chilli powder, coriander powder & salt . Simmer & cook till oil separates
- Now add the baby corn first. Saute for 2 mins
- Add the diced capsicum/bell peppers. Saute for 2 mins
- Add onion petals.
- Add the Kashmiri Chilli powder.
- Cook the onions / peppers till they are half cooked
- Add the paneer pieces & mix well. Cook for 2 mins
- Now add the cream & 1 cup water. Stir well
- Cover and cook for 7-8 mins.
- Add the garam masala powder & kasuri methi
- Mix & cook covered for another 2-3 mins.
- Serve hot with roti.
