How To make Beans 'N' Rice Cha Cha Cha
INGREDIENTS:
2 tb Olive oil
2 lg Cloves garlic, minced
1 c Sliced onion
1 c Peeled, sliced celery
1 c Sliced carrots
1 ts Chili powder
1/4 c Canned diced green chiles
2 c Sliced mushrooms
2 c Cooked basic black beans
(see following recipe) 1/2 c Reserve bean stock
2 tb Chopped cilantro
Salt and pepper to taste 3 c Cooked brown rice
BASIC BEANS:
1 lb Dried beans (black, navy,
Pinto, haricot, etc) 1/4 Onion, roughly sliced
1 tb Lemon juice
2 ts Salt or to taste
1. In large deep saucepan heat olive oil, and saute
garlic, onion, celery, carrots and chili powder, until onion is translucent. 2. Add chiles and mushrooms and saute 5 minues more.
3. Stir in beans, bean stock and cilantro. Season to
taste. 4. Cover and simmer over low heat about 10 minutes,
stirring occasionally. 5. Serve over rice.
DIRECTIONS FOR BASIC BEANS: 1. Prepare beans for cooking as described in How
Cook Beans. (see next post) 2. Cook covered, with onion and lemon juice, until
tender. Do not stir during cooking. 3. Add salt to taste
4. Set aside until next day. They should be somewhat

One of our favourite desserts made with coconut milk, this treat is sweet and comforting. If you are able to, get fresh coconut milk as we’d recommend over the packets ones!

Sago and coloured tapioca cubes give this dish both texture and a nice colour contrast. For our Bubur Cha Cha recipe (or 摩摩喳喳), we are using 3 types of sweet potatoes and yam too. After steaming the sweet potatoes, add the purple ones only before serving as it tends to dye the coconut milk. A really wholesome and simple recipe to make at home, great either hot or cold!

200g yam (cubed)
100g purple sweet potato (cubed)
100g orange sweet potato (cubed)
100g yellow sweet potato (cubed)
40g tapioca pearls (sago)
100g tapioca flour cubes (for bubur cha cha)
800ml water
500g coconut milk
140g rock sugar
4-5 pandan leaves (knotted)
Pinch of salt, to taste

Ingredients 配料 :
2 cups Rice, washed clean 2 杯 米, 洗干净
300g Long Beans, diced 300g克 长豆, 切粒
30g Dried Shrimp 30克 虾米
30g Shiitake mushroom, diced 30克 香菇, 切粒
1 Chinese Sausage, diced 1条 香肠, 切粒
120g Pork Belly, diced 120克 五花肉, 切粒
6 Shallot, sliced 6粒 小葱头, 切片
2 Cup Rice 2杯 米
2½ Cup Water 2½杯 水
Seasonings 调味料 :
1 teaspoon Salt 1茶匙 盐
½ teaspoon Pepper ½茶匙 胡椒粉
¼ teaspoon Sugar ¼茶匙 糖
1 tablespoon Oyster Sauce 1汤匙 蚝油
1 teaspoon Dark Soy Sauce 1茶匙 酱油
