-Flavored Gelatin 1 pt Vanilla Ice Cream (2 cups)
1 Chocolate-flavored crumb
-pie shell Milk chocolate kisses - -(optional) 1. In a 4-cup glass measuring cup stir together water and gelatin. Cook,
uncovered, on 100% power (high) for 1 1/2 to2 minutes. 2. Add vanilla ice cream to the hot gelatin mixture, stirring till ice
cream is melted. Chill mixture for 35 to 30 minutes, stirring twice during chilling (the mixture should mound when you drop it from a spoon. 3. Pour chilled ice cream mixture into pie shell. Chill about 4 hours or
till ice cream is set. 4. If desired, arrange milk chocolate kisses in a heart shape atop pie.

Ingredients for 10 mini pies

Dough
130g softened butter
80g caster sugar
250g (2 cups) all purpose flour
1egg,(Sub: 1 flax egg for vegan)*
1/2 tsp salt
1 tsp vanilla extract
*1 flax egg =1 tbsp freshly ground flax seed+3 tbsp water
Homemade raspberry jam
700g raspberries, fresh or frozen
350g caster sugar
1/2 lemon, zest and juice
1 tsp vanilla extract
2-3 thyme sprigs
Instructions
Make the dough: beat butter and sugar until well combined. Add egg, vanilla and salt and beat to combine. Add flour and beat just until the dough comes together. Wrap and refrigerate for 30 min. Roll out dough to 3-4 mm and cut out rounds that fit the tart mold.
For best results, blind bake.
Fill with jam, fresh raspberries and thyme. Cover with smaller dough rounds.
Bake in a preheated oven at 180C degrees for about 20 minutes.
For the jam
Combine the ingredients in a large heavy pot. Let macerate for 1h, then bake for 1h. Fill sterilized jars with hot jam and let cool upside down.

Valentine's Day and Peanut Butter Pie Recipe
It's Valentine's Day! Come with us as we celebrate with a tasty treat for the family.
Peanut Butter Pie recipe
adapted from Joy of Cooking
Crumb crust:
1 1/2 cups graham cracker crumbs (or any cookie crumbs)
6 tablespoons of melted butter
pinch of salt
Combine all ingredients and press into bottom and partially up the sides of pan (pie pan, cupcake tin, or other mold.)
Freeze for 20 minutes
Peanut Butter mousse:
1 cup heavy whipping cream
8 oz block of cream cheese, room temp
1/2 cup sugar
1 cup smooth peanut butter
2 teaspoons vanilla extract
Whip heavy cream in clean bowl until stiff peaks, set aside.
Beat the rest of the ingredients until smooth and incorporated.
Fold in the whipped cream in three parts to preserve the airiness, careful not to over mix.
Spread the peanut butter cream mixture evenly in pan (mold, tins, etc.) Cover with plastic wrap and freeze for 20 minutes or refrigerate for 4 hours.
Chocolate ganache:
2 tablespoons butter
1/3 cup heavy whipping cream
4 oz bar bittersweet chocolate, chopped
Place butter and cream in small sauce pan over medium-low heat and bring to a simmer.
With chopped chocolate in a heatproof bowl, pour heated cream mixture over the chocolate and let sit for 5 minutes.
Stir the chocolate mixture until smooth and shiny.
Spoon chocolate over the peanut butter mousse in even layer. Cover and freeze 1 hour of refrigerate until service.
Enjoy!
(I melted red candy melts and piped harts on the mini pies and served, or you could place in fridge until ready to eat.)

This is my go to pie crust for all things pie. When baking a chicken pot pie or a rabbit pie or my french silk pie or the fun little pie we'll be making next week;) (stay tuned for that one!)
Simple and easy. Easier with a food processor. Mine literally broke as I was making this video and I had to start over. But my new food processor is on it's way! So are my pie weights! No more beans for me! lol
