How To make Baked Salmon In Redwine and Onion Marmalade

3 Lbs. salmon filet
cut in 8 pieces 6 onions :
sliced 4 C. red wine 1/3 C. sugar 2 C. cream 1/2 Stick butter Melt the butter in a large pot and add the onions. Let cook for 10 minutes and add the 2 cups red wine. Continue cooking until almost all the liquid evaporated. Season with sugar and salt and pepper to taste. Place the salmon filet in baking dish and add the remaining red wine and cream. Sprinkle with salt and pepper. Bake at 475 degrees for 7 minutes. Lift out the cooked salmon and set aside. Pour the liquid into a pot and reduce until syrup consistency. Adjust seasoning. Place some onion marmalade on top of salmon and spoon some sauce over it and serve

Ingredients For Garlic And Herb Marinated Salmon: * Cedar Plank Optional * Salmon Fillets Cut Into 4 to 6 Ounce Portions * 3/4 Cup Olive Oil * 1/4 Cup Red Wine Vinegar * 3 Tbsp Homey * 6 Minced Garlic Cloves * Chopped Basil (handful) * 3 Tbsp Chopped Flat Leaf Parsley * 3 Tbsp Chopped Rosemary * 1 Tbsp Sea Salt * 1 Tbsp Black Pepper Optional Marinated Cherry Tomatoes: * 1 Pound Sliced Cherry Tomatoes * 1/3 Remaining Marinade from above Recipe * 1/2 Small Red Onion Chopped (not in video but suggested) I would suggest not letting the fish marinate longer than an hour due to lemon juice being an ingredient in this recipe. Lemon juice can start cooking the fish if it marinates too long.
