Hey all, I wanted to make my own version of the Everything But the Bagel Seasoning that everyone loves! It turns out that it's super simple and can be made with just a few ingredients. Also, I am fighting a cold for the last week and half which is why my voice sounds pretty terrible. I tried to record this when I felt better, but that was just taking too long. A bagel (Yiddish: בײגל, romanized: beygl; Polish: bajgiel; also historically spelled beigel)[1] is a bread product originating in the Jewish communities of Poland. It is traditionally shaped by hand into the form of a ring from yeasted wheat dough, roughly hand-sized, that is first boiled for a short time in water and then baked. The result is a dense, chewy, doughy interior with a browned and sometimes crisp exterior. Bagels are often topped with seeds baked on the outer crust, with the traditional ones being poppy and sesame seeds. Some may have salt sprinkled on their surface, and there are different dough types, such as whole-grain and rye.[2][3]
The earliest known mention of a boiled-then-baked ring-shaped bread can be found in a 13th-century Arabic cookbook, where they are referred to as ka'ak.[4] Bagels have been widely associated with Ashkenazi Jews since the 17th century; they were first mentioned in 1610 in Jewish community ordinances in Kraków, Poland.[5] Bagel-like bread known as obwarzanek was common earlier in Poland as seen in royal family accounts from 1394.[6]
Bagels are now a popular bread product in North America and Poland, especially in cities with a large Jewish population, many with alternative ways of making them. Bagels are also sold (fresh or frozen, often in many flavors) in supermarkets.
The basic roll-with-a-hole design is hundreds of years old and has other practical advantages besides providing more even cooking and baking of the dough: The hole could be used to thread string or dowels through groups of bagels, allowing easier handling and transportation and more appealing seller displays
Homemade Bagels With Sesame And Poppy Seeds
A bagel is a type of bread roll with a special O-ring shape.
Made of simple ingredients : high-gluten flour, salt, water, yeast and honey (or malt syrup). It's dough is boiled, then baked.
Combine all ingredients in the mixing bowl and mix for 10 minutes. Let the dough proof for an hour. Scale the dough into bagels(each 110 g). Let the dough rise (25 minutes). Put them into the hot water and let the dough boil for 30 seconds on each side. A brief boil gives bagels a thin and fairly elastic crust that will still allow the bagels rise quite a bit in the oven, resulting in a softer texture. Add 15 ml honey or malt syrup in the boiling water. place parchment paper in a baking pan, egg wash bagels with 1 egg and 15 ml milk, sprinkle sesame and poppy seeds. Bake in a preheated oven for 20-25 minutes at 210 °C.
And remember: your room temperature for dough proofing should be between 25°C and 36°C.
Very often I proof my dough in the oven as I keep door closed for the duration of the proofing time.
Get thermometer for baking and you’ll never have to guess at it again, it gets easier when you have the right tools, temperatures are extremely important while working with yeast and dough.

3 EASY FLAVOUR OF BAGEL RECIPE
Sesame seed bagels, Plain bagels,
& Everything bagels
Ingredients: Yield 8
500g bread flour (3 1/2 cups) or
All-Purpose flour
23g white sugar (1 1/2 Tbsp)
8g active dried yeast (1 sachet)
320 ml warm water
6g tsp salt (1 1/2)
Water for boilng the bagels
1 tsp baking soda to add in the
boiling water (optional) only
if using All-purpose flour.
1 egg yolk + 2 tsp water for
the egg wash
EVERYTHING BAGEL SEASONING:
1 Tbsp dried garlic flake/granules
1 1/2 Tbsp dried onion flakes/ganules
1 Tbsp white sesame seeds
1 Tbsp poppy seeds
1 Tbsp black sesame seeds, if using
1/2 Tbsp kosher salt/ flaky salt
(ideally flaky salt)
2 Tbsp white sesame seeds for
Sesame seed bagels seasoning.
Note: If you are using BREAD FLOUR for
this recipe, skip the baking soda in
the boiling water where you boil the bagels.
The baking soda will only add in the boiling
water when you're using ALL-PURPOSE flour
to have a little stretchy dough after cooked.
