How To make Apple Raisin Muffins 2
nonstick cooking spray 2 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
3 packets sugar substitute
1 egg -- lightly beaten
3 tablespoons canola oil
1/2 cup skim milk
1 cup unsweetened applesauce
1/2 cup plumped raisins
(To plump raisins: place in a small bowl and pour 1 cup boiling water over rais ins. Let stand 15 minutes, then drain.)
Preheat oven to 400 degrees. Prepare standard muffin tins with nonstick cookin g spray. Combine dry ingredients in mixing bowl and mix thoroughly.
In a small bowl, combine egg, oil, milk, and applesauce. Slowly add to dry ing redients, mixing only until combined. Fold in raisins.
Fill muffin tins 2/3 full. Bake for 25 to 30 minutes until lightly browned. R emove from oven and turn muffins out of tin onto cooling rack. When cool, stor e muffins in refrigerator or freezer for future use.
12 servings/Serving size: 1 muffin

Also, at 425 F cooking, try less than 20 min, like 17, 18 or 19, these were slightly overbooked sadly. I ate one & it was ok- the walnut & apples go well together with the raisin flavor -- the apples helped to keep them relatively moist even though they are over baked.
Took a little more than 1 hour in reality /
Recipe
Heat oven to 425 F (~218 C)
Grease muffin pan with butter or similar
Mix dry ingredients in a bowl:
2 cups all purpose flour
1 cup sugar
1 tablespoon salt
2 tablespoons baking soda
1 tablespoon real cinnamon
In another bowl, whisk together:
1/2 cup oil of your choice
2 eggs
2 tablespoons of real vanilla extract
Pour the wet mix into the dry & mix together thoroughly
Next fold in:
1-2 cups chopped walnuts
1 cup raisins
1-3 cups of peeled chopped Apple
Using an ice cream scoop or spoon, drop mix into the greased muffin with equal portions for each muffin.
Bake for 17-20 min - we found that 20 min seemed too done, so you might try less time or a slightly lower temperature. We used a non-convection traditional electric oven - so adjust baking to your method accordingly!

I dislike because its unhealthy, veggie oil *too refined* too much Omega 6** , way over ultra or hyper processed semi- or quasi toxic /
If I were making these for personal reasons, instead of making them as a special favor for someone else, I would recommend replacing the 1/2 cup veggie oil with 1/2 cup of warm lard, ghee, butter, coconut, walnut oil, or similar neutral flavor minimally fresh cold processed oil of your choice, ideally one higher in Omega 3 & lower in Omega 6.

These easy + healthy Apple flavor oatmeal raisins muffins make a delicious grab-and-go seasonal breakfast. Think apple pie mixed with oats baked into a yummy muffin. I also love adding them to my meal prep because then I can make them ahead and have them ready for a busy morning or I can pop them into lunch boxes as a kid friendly afternoon snack as well.
--- Apple Flavor Oatmeal Raisins Muffins ----
Preparation Time - 10 minutes
Baking Time - 25-30 minutes
Serving - 12
Ingredients:-
-Old fashioned rolled oats - 3cups
-Baking powder - 1tsp
-Cinnamon Powder - 1/2tsp
-Organic buttermilk (or simple milk) - 1cup
-Eggs(beaten) - 2
-Applesauce(cinnamon flavor) - 1/2cup
-Apple(chopped) - 2(medium size)
-Raisins - 1/4cup
-Walnuts - 1/4cup
-Brown Sugar - 1/4cup
Procedure:-
-Preheat oven to 350ºF or 180ºC for 10 minutes.
-In a large bowl add oats, baking powder, cinnamon powder, buttermilk and applesauce.
-Break 2 large eggs, beat it and add to oats batter. Mix together until everything is well combined.
-Add in chopped apple and raisins and mix until they are evenly distributed in the batter.
-Grease a 12-count muffin pan or two 6-count muffin pans with non-stick cooking spray or coat with oil and keep aside.
-Add batter to all 12 muffin cups.
-Mix walnuts and brown sugar into bowl and add it as toppings on six muffins or on one pan.
-Put both the pans in oven and bake for 25-30 minutes or until they have set though and are golden brown on top and edges.
-Remove pans from oven and let them cool down for 10 minutes.
-Enjoy healthy muffins.
Tips:-
-You can store these healthy muffins in an airtight container and keep them in the fridge.
-They will last a good week stored this way.

Makes 12 muffins
Ingredients:
For the muffins:
2 Apples
1 Egg, large
1/2 cup (120ml) Milk
1/3 cup (80ml) vegetable oil
1¼ cups (160g) Flour
2 teaspoons Baking powder
1/4 teaspoon Salt
3/4 cup (150g) Sugar
1 teaspoon Vanilla extract
For the crumble:
1/4 cup (60g) Butter, cold
1/2 cup (65g) Flour
1/2 cup (100g) brown Sugar
1 teaspoon Cinnamon
Directions:
1. Preheat oven to 350F (175C). Line a 12-cup muffin pan with muffins liners, spray the cups with oil (optional) and set aside.
2. Make the muffins: In a bowl mix milk, oil, egg and vanilla extract. Set aside.
3. In a separate bowl, combine flour, baking powder, sugar and salt.
4. Peel the apples and cut into small chunks. Place apple chunks into the flour mixture and toss well to ensure the apples are well coated.
5. Pour the wet mixture into the dry mixture and mix until combined.
6. Scoop the batter into muffin cups until 3/4 full.
7. Make the crumble: Combine the ingredients for the crumble topping together in a small bowl and crumble together using your finger tips.
8. Sprinkle some crumble on top of each muffin batter. Bake for 20-25 minutes, until a toothpick inserted into the center comes out clean.
9. Let cool before serving.
