Ingredients:
16 oz bow tie pasta
1 cup steamed corn
1 cup peas (microwaved if frozen)
1/2 cup chopped sun-dried tomatoes
1-2 cups grilled zucchini
1 bell pepper, chopped and grilled
1 red onion, diced and grilled
3/4 cup vegan feta
Summer Vinaigrette:
1/2 cup olive oil
3 tbsp white wine vinegar
1 tsp dried dill
1 tsp dried basil
1 tsp oregano
1 tsp Dijon mustard
1/2 tsp garlic powder
A pinch of pepper and salt
Instructions:
Boil the bow-tie pasta according to package instructions.
While the pasta is cooking, grill the bell peppers, zucchini, corn, and red onion. If you don't have a grill, you can sauté or roast them for a similar effect.
Microwave the frozen peas as needed.
Once the pasta is cooked, strain it and transfer it to a large mixing bowl. Add the grilled vegetables, chopped sun-dried tomatoes, and vegan feta.
For the Summer Vinaigrette:
In a separate bowl, whisk together olive oil, white wine vinegar, dried dill, dried basil, oregano, dijon mustard, garlic powder, salt, and pepper.
Drizzle the vinaigrette over the pasta and vegetable mixture.
Gently toss everything together until well combined and coated in the flavorful vinaigrette.
Serve and savor your delicious Summer Pasta Salad, or store it in the fridge for up to 4 days, making it a perfect meal prep option.

Jennifer Aniston Salad
Today I'm testing out the viral Jennifer Aniston Salad! Spoiler alert--she never actually ate this salad on the set of Friends, but it's still an awesome recipe!
Jennifer Aniston Salad
1 c. quinoa, rinsed thoroughly
2 c. water
1 English cucumber, diced
1 bunch fresh mint, chopped
1/2 bunch fresh parsley, chopped
1 small red onion, finely diced
1/2 c. chopped pistachios
1-15 oz. can chickpeas, drained and rinsed
1/2 c. crumbled feta cheese
1/4 c. extra virgin olive oil
2 lemons, juiced
salt & pepper
Cook the quinoa--add the water, quinoa, and a generous pinch of salt to a medium saucepan. Bring to a boil. Cover and reduce heat to LOW. Simmer for 15 minutes. Remove from heat and allow to sit for 3-5 more minutes (or until all water is absorbed). Fluff with a fork.
In a large bowl, combine the cooked quinoa, cucumber, mint, parsley, onion, pistachios, chickpeas and feta cheese. Drizzle the olive oil and lemon juice over top. Season with salt and pepper. Stir to combine. Cover and refrigerate for at least an hour before serving. ENJOY!
