Ingredients 材料:
300g plain flour (普通面粉)
100g almond nibs(杏仁粒)
100g ground almonds(杏仁粉)
100g caster sugar (细砂糖)
1/2 tsp baking powder (发粉)
1/2 tsp baking soda (苏打粉)
1/4 tsp salt (盐)
200ml cooking oil(食油)
2 egg yolks add a pinch of salt and mix well - for glazing
Bake in a preheated oven at 160°C for 20 minuets.

Chinese Almond Cookies Recipe:
In a bowl mix
1 cup All Purpose Flour
1/2 cup Almond Flour
1/2 tsp Baking Soda
1/4 tsp Kosher Salt
In another bowl mix
1/2 cup room temp butter
cream with 1/2 cup sugar
Add 1 egg and mix again
add 1 tsp vanilla
1/2 tsp almond extract
Mix the dry ingredients into the wet. Chill 30 minutes.
Roll into balls, place onto a parchment-lined baking sheet
flatten with a spoon, brush with egg wash and place a raw almond in the center of each cookie. If you'd like small, dense cookies, chill the cookies for 15 minutes before baking.
Bake at 350ºF for 8-10 minutes until golden brown

▶️ The Recipe Chinese Almond Cookies Recipe
▶️ Ingredients:
• 1 cup butter, softened
• 1 cup sugar
• 1 large egg, room temperature
• 1 teaspoon almond extract
• 3 cups all-purpose flour
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 1/4 cup sliced almonds
• 1 large egg white
• 1/2 teaspoon water
▶️ Method and Instructions:
• Preheat the oven to 350 degrees Fahrenheit. Beat butter and sugar together in a large mixing basin for 5-7 minutes, or until light and fluffy. In a large mixing bowl, whisk together the egg and the extract. Gradually add flour, baking soda, and salt.
• Make 1-inch balls out of the dough. Place 2 inches apart on baking pans that haven't been greased. With a fork, flatten gently. Almonds should be sprinkled on top and pressed in place if necessary. In a small dish, whisk together the egg white and the water. Brush the cookies with the egg wash.
• Bake for 8-10 minutes, or until the edges and bottoms are lightly browned. Allow to cool for 2 minutes before transferring to wire racks.

Chinese Almond Cookie Recipe

Chinese Almond Cookies were a type of cookie my mother always made while I was growing up. I didn’t quite appreciate the flavor of them until I was older, probably because as a kid you always want lots of frosting and lots of sprinkles but now I’m a fan of just a simple cookie like this and the flavor is just enough different with the almond extract in them.
Chinese Almond Cookies Recipe
-1 cup unsalted butter
-1 cup granulated sugar
-2 tsp almond extract
-1 egg
-2 and 3/4 cups all purpose flour
-1/2 tsp baking soda
-1/2 tsp salt
-sliced almonds
-extra granulated sugar
Preheat oven to 325°. In a large mixing bowl put in the butter and beat it. Add in the sugar and cream that and the butter for about two minutes. Next add the almond extract and the egg. Mix again and scrape down the sides of the bowl if needed.  Now for the dry ingredients, put in the flour, baking soda and salt. Mix everything until it’s fully incorporated and the dough forms in the bowl while it’s being mixed.
Now take out small amounts of dough, roll them into balls between your hands about 1 inch to 1 1/2 inch in size and set them on a cookie sheet with space in between each dough ball. Take a cup or a jar, I use a jam jar, and press the dough balls down to make the cookie. Next, take your sliced almonds and press one piece into the top of each cookie.
Once finished, put your cookie sheet into the preheated oven and bake the cookies for 10 minutes. When they are done baking place them on a cooling rack and make sure your cookies are not browning. If they brown they’ve been baking too long. Once cooled, you may enjoy your cookie with your favorite warm beverage, like coffee or tea. Happy eating!
