DIY Hot Pockets: The Perfect Make-Ahead Meal for Busy Days
This is how god always intended hot pockets should be made.
Short Crust Pastry:
3 1/2 cups (500g) + 3 tbsp ( all-purpose flour
big pinch of white or caster sugar
1 tsp sea salt
2 1/2 sticks which are 5 1/2 oz (310 g) unsalted butter
2 whole eggs
2 tbsp whole milk
Bechamel sauce base mix: (this was a lot and you can certainly half the recipe)
8 oz (226 grams) butter
14 oz (386 grams) all-purpose flour
3 quarts (2.83 liters or 6 pints) of whole milk
Chicken Bacon Ranch Hot pocket mix: (1/2 of bechamel sauce)
4 oz (113 grams) mozzarella cheese
5 oz (141 grams) Asiago cheese
5 oz (141 grams) parmesan cheese
1 packet of buttermilk ranch seasoning
1 whole roasted chicken with the meat picked off
1 whole pack of cooked bacon cut into squares
salt and pepper to taste
Philly Cheese Steak Hot pocket mix: (1/2 of bechamel sauce, I would recommend using 1/4 of the mix for a more meaty experience)
2 tbsp cooking oil
2 tbsp unsalted butter
2 medium onions or 1 large onion diced
2 lbs (0.9 kg) steak of choice cut into thin strips
2 roasted and peeled red bell peppers
20 slices Velveeta cheese
5 oz (141 grams) mozzarella cheese
salt and pepper to taste

This is a taste test/review of the Lean Cuisine Wood Fire Style BBQ Recipe Chicken Pizza. That's a mouthful! It has mozzarella cheese, white meat chicken, red onions, cilantro, & BBQ sauce all on a thin crust. It is 340 calories which is not bad for an entire personal-size pizza.

INGREDIENTS
* olive oil
* garlic, minced
* butter
* tbsp flour
* milk, cold
* salt
* black pepper
* Italian seasonings, dried
* parmesan cheese, freshly grated
* fresh chopped parsley (optional)
To make the white sauce for pizza
* 1. Roast garlic. In a small pan on medium-low heat, add olive oil and garlic. Sauté garlic about 3 minutes until translucent, stirring regularly. Remove from heat before garlic browns. Set aside.
* 2. Heat butter with flour. Add butter to a small sauce pan on medium heat. Once butter melts, add flour by whisking it in slowly so it doesn’t clump. Cook flour and milk (aka a roux or Béchamel sauce) for about 1 minute until it turns light brown and the air smells nutty.
* 3. Add milk to white pizza sauce. With the sauce pan on medium heat, slowly pour cold milk into the roux, whisking as it incorporates. Turn the heat of the burner to high, and once the milk bubbles (1-2 minutes later), reduce the heat to medium. Then add cooked garlic olive oil mixture to the roux. Continue to whisk ingredients as they bubble for 1 minute. Turn off the heat of the burner (leaving the pan on the burner is fine to pick up residual heat).
* 4. Add the rest of the white pizza sauce ingredients. Add seasonings to the mixture (salt, black pepper, Italian dried seasonings). Add parmesan cheese and whisk until combined and the sauce becomes smooth.
Remove from the burner, stir in the fresh chopped parsley, and set aside while making the pizza. Or store in the refrigerator and reheat on low if making the sauce more than 20 minutes in advance.
