1 c Whole Wheat Flour
1/2 c Oat-blend Flour
3 tb Date Sugar
1 tb Dry Milk
1 1/2 ts Sea Salt
6 Threads Saffron
1 1/4 c Water -- warmed
2 tb Canola, Sunflower or
Safflower Oil 4 ts Active Dry Yeast
2/3 c Currants
Add ingred. to machine per your instructions except the currants. Add the currants at the "beep". Program for WHOLE WHEAT mode. In my ABM100, I used the WHITE brEAD cycle. Source: The Bread Machine Gourmet.

Dough
400 grams (2 ½ cups) Bread Flour
200 grams ( ¾ cups) Milk
80 grams (⅓ cup) Sugar
4 grams (¾ tsp) Salt
4 grams (2 tsps) Ground Cardamom
70 grams (⅝ cup) Butter
50 grams (1 Large) Egg
120 grams (½ cup) Sourdough Stiff Starter
2 tsps saffron in a mortar + 1 tsp of milk
+ 1 egg for eggwash
Stiff Starter or Levain
30 grams (2 Tbsp) Water
30 grams (2 Tbsp) Sourdough Starter
60 grams (½ Cup) Flour
Filling
30 grams (2 tbsps) Butter at room temperature
25 grams (2 tbsps) Sugar
90 grams (½ cup) Raisins

Swedish Saffron Buns: Lussebullar spelt flour + oat milk
Swedish Saffron Buns: Lussebullar spelt flour + oat milk are usually made and eaten on 13 Dec St Lucia's. My version of this Swedish recipe is using spelt flour and oat milk.
Saffron buns are a classic Swedish recipe for fluffy buns or fluffy cats as they are known in Sweden. Why wait until December let's practise eating them now. The scroll-style saffron buns look fancy but are relatively easy to make. In my video, I used a combination of white and wholegrain spelt flour, I was amazed they still tasted great. Not traditional for saffron buns but I add a little vanilla sugar and cardamom spice as they are quite plain style buns. 1:28 step 1 warm milk and melt butter. add saffron to melt into the milk

Recipe: Swedish saffron buns
Now is your chance to bake the most delicious saffron buns for Christmas. Just follow the recipe by cookbook writer and blogger Fredrik from 'Fredriks Fika'! ????????
Recipe (32 buns):
Ingredients:
1g saffron
1 tsp caster sugar
50g fresh yeast or 14g dry yeast
500g milk
180g caster sugar
1 teaspoon salt
200 g softened butter
840-900 g all purpose flour
Brushing:
1 egg
Raisin
How to:
Grind the saffron with the sugar. Warm the milk to 37 degrees Celsius or 98 degrees Fahrenheit and add the saffron.
Crumble the yeast in a bowl and add the milk.
3. Add sugar, salt, butter and almost all the flour. Work the dough for 10 minutes.
5. Cover the bowl and leave it to rise for 30 minutes.
Knead the dough lightly and divide it into 32 equal parts. Roll out each part and roll together as shown in the video.
7. Place the buns on a sheet of baking paper and cover with a cloth and leave it to rise for 30 minutes.
8. Brush the buns with egg wash and put in raisins.
9. Bake the buns at 220 Celsius or 430 Fahrenheit for 7-8 minutes.
10. Let the buns cool on a wire rack under a cloth.
Yeast: If you use to bake bread or buns, use the same amount yeast that you would use for two cups of liquid. If you use dry yeast, you should heat the milk a couple of degrees warmer, 40 Celsius or 104 Fahrenheit.

Lussekatter is the Swedish word for fragrant saffron buns that are served as part of the celebrations for St. Lucia Day (especially for breakfast and the fikas that follow), held on December 13th to honor Saint Lucia of Syracruse who was said to have brought food to the Christians hiding from persecution in the Roman catacombs.
Lussekatter, or Swedish saffron buns, are relatively easy to make but you’ll need to plan some extra time because the sweet dough takes two risings. Saffron, one of the essential ingredients in these traditional Swedish holiday buns, can be found in most grocery stores in the spice aisle. Although it can seem expensive, a little saffron goes a long way, and most recipes that utilize this precious spice only call for a pinch or two.
One of the things to note about St. Lucia saffron buns is their distinctive “S” shape, made by rolling the dough into a long strand and then rolling each end back on itself. St. Lucia Day is also widely celebrated with processions in which young girls pass out the saffron buns while dressed as St. Lucia with a wreath of lingonberries and candles (yes, REAL candles) in their hair.
