Ingredients:
1 1/2 Cups All Purpose or Whole Wheat Flour (210g)
1 Teaspoon Baking Powder (5g)
1/2 Teaspoon Baking Soda (2.5g)
1/4 Teaspoon Salt (1.5g)
3 Tablespoons Sugar (36g)
2 Eggs
1 Teaspoon Vanilla Extract (5ml)
2 Tablespoons Olive Oil or Melted Butter (30ml)
1 Teaspoon Orange Zest (2g)
1 Cup Orange Juice (240ml)
1 Cup Fresh Cranberries (100g)
Directions:
1. In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, and sugar. Set aside. In another bowl, whisk together the eggs, vanilla, oil, zest, and orange juice until well combined. Add the orange juice mixture to the dry ingredients and stir just until combined. Fold in the cranberries.
2. Heat a pan over medium-low heat, spray with cooking spray. Spoon batter into pan forming a circle (about 1/4 cup of batter). Cook until edges are dry and bubbles start to appear on the surface, then flip pancake over and continue to cook about 2 more minutes or until the pancake is fully cooked. Repeat the process with the rest of the batter. Serve warm.
