Maelle and Richard's easy Chocolate Yule Log - Part 1
Maelle and Richard demonstrate how to make a classic Chocolate Yule Log. In this film you can see how to make an easy and delicious flourless chocolate sponge, perfect for rolling to make your Yule Log, and it's gluten free too. Here's what you will need!
Ingredients:
For the Cake:
6 large eggs, separated
150g golden caster sugar
50g cocoa powder
For the Chocolate Mascarpone Frosting:
100g chopped good quality (70% cocoa) dark chocolate (not baking chocolate)
400g mascarpone cheese, softened but cool
40g golden caster sugar
For the filling:
160 – 170g cherry jam
For the Decorations:
Cocoa powder
Icing sugar
Christmas yule log decorations
Equipment:
A Swiss Roll tin measuring 25 x 35cm, lightly oiled and lined with a single sheet of baking parchment or liner to fit the base, also lightly oiled.
Method:
Making the Cake:
Pre-heat the oven to gas mark 4, 350F, 180C.
Put the egg yolks into a medium sized mixing bowl and lightly whisk, then add the caster sugar and continue to whisk until the mixture becomes thick and creamy (about 5 minutes with an electric hand whisk). Now add the cocoa powder and thoroughly mix in.
In another scrupulously clean, large mixing bowl, whisk the egg whites to meringue, to the soft peak stage. Using a metal spoon, carefully cut and fold the one third of the meringue mixture into the chocolate mixture. When it is well mixed, add this mixture to the remaining two thirds of the meringue mixture in the larger mixing bowl and fold in until all the meringue is smoothly incorporated. Now pour this into the prepared tin, ensuring it is evenly spread, and bake in the centre of the oven for 20-25 minutes until springy to the touch.
Leave the cake to cool in the tin. It will shrink a bit.
Making the Chocolate Mascarpone Frosting:
While the sponge is cooling, make the frosting.
Melt the chocolate in a bowl over a saucepan of hot water.
Mix the caster sugar into the mascarpone, followed by the melted chocolate. You can use an electric hand whisk or just a spatula or wooden spoon. Mix well and place in the fridge until needed.
Finishing and decorating the Cake:
Now the cake is cold, turn it out onto a rectangle of greaseproof paper and peel off the lining paper from the bottom of the cake (which will now be facing upwards).
Spread the cherry jam evenly over the cake, then spread about one about half of the chocolate mascarpone frosting evenly over the cake on top of the jam, using a palette knife.
Starting with the long side, carefully roll up the cake into a log shape, using the greaseproof paper to help you. If it cracks a little, do not worry.
Spread the remaining frosting over the log so that all the sponge is covered.
With a sharp knife, cut a piece off both ends so that they slant, as in the video and stick the pieces back on the log to make them look like branches that have been cut off. Add more frosting to cover the joins.
Finally, with a fork, run the prongs along the frosting to make it look like bark.
If you want a snowy effect, you can dust with icing sugar and perhaps add some edible silver glitter spray or whatever decorations you like. You could also dust with cocoa, or add grated chocolate on top.
Store in the fridge and eat soon!
