How To make White Chocolate Scones
2 c All-purpose flour
1/3 c Granulated sugar
2 ts Baking powder
1/2 ts Salt
1/4 c Unsalted butter, chilled
1/2 c Heavy (whipping) cream
1 lg Egg
1 1/2 ts Vanilla extract
6 oz White chocolate, cut into
-1/2 inch chunks Preheat oven to 375 degrees. In a large bowl, stir together the flour, sugar, baking powder, and salt. Cut the butter into 1/2 inch cubes and distribute them over the flour mixture. With a pastry blender or two knives used scissors fashion, cut in the butter until the mixture resembles coarse crumbs. In a small bowl, stir together the cream, egg, and vanilla. Add the cream mixture to the flour mixture and knead until combined. Knead in the white chocolate. With lightly floured hands, pat the dough out on a floured work surface to a thickness of 5/8 inch. Cut circles in the dough with a biscuit cutter. Gather the scraps of dough together and repeat till all the dough is used. Bake scones on ungreased baking sheet for 15 to 20 minutes, or until lightly browned on top. Place baking sheet on wire rack for 5 minutes, then transfer scones to wire rack to cool. Greetings! One last recipe before we go. I was preparing these to give to the neighbors and figured what the heck, I'll share the recipe with you. these are super simple and delicious. Last year I made several batches for my mom to give to her co workers. One of them, who is a world traveler, said that he had never had a better scone, even in Ireland! that was a wonderful comment!
I hope you give these a try, if not for Christmas, than some other time. There has not seemed to be enough time to share everything that I wanted to in this series, but next year, I'll have a head start with the lists that I have already made.

Ingredients:
- 400g self raising flour,
- 1 teaspoon baking powder,
- 1 tablespoon sugar,
- pinch of salt,
- about 150ml milk,
- 1 egg,
- 1/2 teaspoon vanilla bean paste,
- 1 tablespoon lemon juice,
- 90g cold butter,
- 50g chopped white chocolate,
- 1 cup fresh raspberries,
- 1 egg for eggwash.

Raspberry & White Chocolate Scones
Recipe
400g plain flour
2 tsp baking powder
3 tbsp caster sugar
95g cold butter, cubed
100g white chocolate, chopped
200ml milk
100g frozen raspberries
1. Preheat the oven to 200°C. Line a baking tray.
2. Mix the flour, baking powder and sugar into a bowl. Add the butter and using your fingertips gently rub in butter until it resembles breadcrumbs. Fold through the white chocolate.
3. Stir through the milk until it becomes a soft dough. Gently fold through the raspberries until combined.
4. Roll out the dough to about 2cm thick and cut out to about 5cm rounds with a cookie cutter. Place onto a lined baking tray and cook for 15 minutes.

Raspberry and white chocolate scones
Serves: 8 scones
Ingredients:
● 340 g flour
● 1 ½ tsp baking powder
● ½ tsp baking soda
● 50 g sugar
● ¼ tsp salt
● 120 g cold butter
● 200 ml milk
● 2 tsp lemon juice
● 150 g frozen raspberries
● 80 g white chocolate
● 2 tbsp cream
Instructions:
1. Toss 340 g flour in a large bowl.
2. Add 1 ½ tsp baking powder, ½ tsp baking soda, 50 g sugar and ¼ tsp salt. Whisk all the ingredients.
3. Add 120 g cubed chilled butter.
4. Mix the butter with flour then crumble it with fingers into pea size pieces.
5. Pour 2 tbsp lemon juice in 200 ml full fat milk and whisk.
6. Pour the milk mixture over dry ingredients.
7. Mix with a fork to bring together a loose dough.
8. Place the dough on a lightly floured surface and shape it into rectangle.
9. Roll the dough 15 mm thick.
10. Crumble 75 g frozen raspberries and sprinkle 25 g white chocolate over one half of dough.
11. Make a cut in the middle and place the dough over the raspberries and white chocolate.
12. Press and shape the layers of dough then roll it out again to 15 mm thick rectangular.
13. On one half of a dough crumble 75 g frozen raspberries and sprinkle 25 g white chocolate.
14. Cut the dough in the middle and repeat the layering.
15. Press and shape layered dough into a square 20 x 20 cm and 2 cm thick.
16. Place it in a freezer for 20 minutes.
17. Meanwhile, preheat the oven to 220 °C.
18. Cut chilled dough into 4 equal squares then cut each square diagonally to get 8 triangles.
19. Place scones on a lined baking tray and brush the surface with cream.
20. Transfer the scones in a preheated oven and reduce the baking temperature to 200 °C.
21. Bake the scones for 20 minutes.
22. Drizzle baked scones with 30 g melted white chocolate.
