2 pk (9 oz each) fresh cheese
-tortellini 2 c Broccoli flowerets (1 bunch)
1/2 lb Havarti cheese, cut in 1/4"
-cubes Half of 7 1/4 oz jar roasted -red peppers, thinly sliced 1/2 c Reduced-calorie Dijon
-vinaigrette dressing Serves 4 Cook the tortellini in a large pot of boiling water according to the package directions. Add the broccoli for the last 5 min of cooking. Combine cheese, peppers and dressing in bowl. Drain pasta and broccoli. Add to cheese and peppers. You’re going to kick off this recipe with cheese tortellini pasta. Cook the pasta according to package directions and watch your salt content in the pasta water! This fresh pasta will pick up on that salty flavor way more than dry pasta would.
Next, pick your favorite Italian or Greek vinaigrette, drizzle it over the pasta, toss it all together, and let’s move it along to the rest of the ingredients!
You’ll start by slicing into a handful of grape tomatoes and red onion. Then, you’ll need the help of a few Mediterranean pantry staples: Pepperoncini peppers (or banana peppers), pitted Kalamata olives, and marinated artichokes. Give all of those ingredients a rough chop and add them to the bowl!
Last, but not least, pepperoni! Or really, any Italian cured meat will do. Cut the sliced deli meat into quarters and add them to the mix as well.
Finish off the pasta salad with shaved parmesan, salt, pepper, and fresh parsley for an extra special, fresh touch!
