So, I'm a little bit obsessed with canned tuna.
Well, canned fish in general actually. Canned and preserved fish is one of the best convenience foods out there. It's packed with good stuff, and it's delicious!
This series is devoted to the joys of canned tuna for dinner. A good canned tuna recipe is a wonderful thing to have in your back pocket, and this is exactly that.
It's a super easy and very deeply satisfying tuna and white bean salad. I've been making this salad for awhile, and it's become a go-to for when I don't have a ton of stuff in the fridge. No matter what shape my fridge is in, I almost always have canned tuna, canned white beans, celery, onion, and lemon on hand. Oh, and there's always something pickled in my fridge door. Today I'm using capers, but you could just as easily use pickles or olives, or a combination of pickled things.

Fagioli e Tonno ( Tuscan Tuna and bean salad )
Ingredients:
1 large can Canellini beans or mixed beans (drained and rinsed)
1 can Tuna in olive oil (drained)
3 sprigs of parsley or thyme
1 teaspoon dried oregano
Juice of 1/2 lemon
1/4 cup good quality olive oil
salt and pepper to taste
Add all ingredients into a salad bowl and mix well. Enjoy!
