How To make Turkey Empanadas
1 c Turkey, cooked; cubed
1 1/3 c Cheddar; coarsely grated
4 oz Green chiles; drained
1 c Flour, whole wheat
1/4 c Corn meal
1/2 ts Salt
1/3 c Butter
1/4 c ;Water, cold
1 tb Milk
4 ts Corn meal; for topping
Mix together turkey, cheese and chilies; set aside. In a different bowl, mix together flour, cornmeal and salt. Cut in butter until particles are the size of small peas (a pastry blender makes this an easy job). Sprinkle with water and mix with pastry blender or fork until pastry can be formed into a ball. Add a little more water if necessary. Divide dough into balls, one ball for each two servings; divide turkey mixture into same number as dough. Turn one dough ball onto floured board and roll into an 11" square. Place on oiled cookie sheet. Spoon one part of turkey mixture over 1/2 of pastry, coming to 1 1/2" of the edge. Fold other half of pastry over it, and crimp
edges to seal them. Repeat this procedure with each ball of dough. Brush turnovers with milk. Sprinkle remaining corn meal on top. Bake at 400 degrees for 25 minutes or until golden brown. Allow to cool slightly; slice into wedges to serve. -- per James Lor Fidonet COOKING echo

A lot lighter than the Beef Empanadas You won't feel so guilty when your going for that last one!
Ingredients
1/2 lbs ground turkey
1 teaspoon seasoned salt
1 tsp garlic powder
1 tsp onion powder
1/4 cup red bell pepper chopped
1/4 cup green pepper chopped
1/4 cup onion chopped
1 packet Sazon Goya
1/2 cup of water
Brown meat in pan on med/high heat.
When Meat in no longer pink begin to add condiments.
Stirring occasionally to prevent meat from sticking to pan.
Once condiments are well incorporated throughout meat add vegetables.
When vegetables have let out most of their water add more water and continue to cook until most of the water has evaporated.

Don’t want to fry them? No problem, brush each empanada with olive oil and bake for 20-22 minutes at 400 degrees
Refrigerate for at least one hour
Ingredients: 20-22 empanadas
Empanada dough
3 3/4 c AP flour
12 tbsp cold butter
1 tbsp sugar
Salt I’m using 1 1/2 tsp
Ground Beef Stuffing:
2 lbs lean ground beef
2 small bell peppers (chopped)
1 Anaheim pepper (chopped)
1 small onion (chopped)
4 minced garlic cloves
2 tsp Mexican oregano
2 tsp thyme
2 tsp parsley
2 tsp basil
2 tsp paprika
1-2 tsp crushed red pepper
1 tsp garlic powder
1 tsp black pepper
Salt I’m using 2 tsp

Easy Filipino-Style Baked Turkey Empanada is the variation of the typical Filipino fried empanadas. It consists of mixed vegetables, dried cranberries, ground turkey, and simple spices. The filling is cooked separately while you have the option to use the ready-made crescent roll dough (Pillsbury Grand Crescents). Empanadas are delicious and well recommended as to-go-to snacks throughout the day!
INGREDIEINTS:
****Fillings****
1 lb ground turkey
1 cup onion, chopped
4 cloves garlic, chopped
1 thumb garlic, chopped
½ cup carrots, shredded and chopped
1 cup potatoes, diced and cooked
¼ cup parsley, chopped
2 boiled eggs, diced
1 tbsp cornstarch
2 ½ tbsp water
cooking oil
Salt and pepper to taste
Chili powder to taste
2 tsp low-sodium soy sauce
1 tbsp brown sugar
½ cup dried cranberries
½ cup green chickpeas
2 tbsp vegetarian oyster sauce
****Dough****
2 crescent roll dough (12 oz)
